Today we spent the day with lead farmer Bali. He showed us around his amazing farm and served us some very interesting fresh smoked milk in his home. At Buku they work with a system of lead farmers. Each lead farmer will be trained by METAD in agriculture techniques, They then has to train up to 40 other farmers each. As Bali is so good in his techniques he has been awarded champion farmer as the only one around Buku.

The bright, beautiful Torvehallerne market, filled to the brim with local produce, exquisite delicacies, and juicy coffee! ⁣

Meet our lovely baristas and go for a smooth espresso drink or an aromatic filter coffee! The hand brew of the day is Halo and Akmel. Both coffees are grown in the luscious mountains of Ethiopia. Halo is a washed coffee with delicate acidity and tropical fruity notes to it. Akmel, on the other hand, is Natural, which means the skin of the cherries has dried on the beans before being removed. This gives us a fruity and rich coffee, that is exceptionally clean for a Natural coffee.

How much is the coffee farmer paid for your favourite beans? The market price for coffee has hit a 12-years low, a price that does not even cover the cost of production for coffee farmers. ⁣

So, how can we turn this around? Creating a transparent database for coffee prices is step one. We see the Transaction Guide as an important tool for the farmers, to have an alternative price reference to the market price, as well as to any buyer of coffee who is looking for a better starting point for price negotiations.⁣

In the newest edition, 57 ‘data donors’ have donated their data to the publication, which gives an even larger and diverse collection of information to empower sellers and buyers. ⁣

First step in reaching Net Zero in 2022 requires a thorough analysis of our current emissions. This research group of University of Copenhagen recently presented their findings for us. ⁣

2022 may seem like a random year to achieve Net Zero. The reason we chose this year, is that we wanted to aim for a goal as soon as we think it is possible to make a serious plan and transition. Because, why wait? 2022 gives time to find solutions that will prove to make sense and be sustainable in the long run as well. ⁣
⁣
In a few weeks time, we will proudly present our newest Sustainability Report. Here you will get an overview of the findings from University of Copenhagen and the initiatives we will make to accommodate this. ⁣

This weekend has been filled with great friends, fascinating new relations and loads of coffee and sour beers. ⁣

We would like to say thank you to Mikkeller for having us at their first-ever Wild Ale Celebration in Copenhagen. It has been an absolute pleasure to work with you. With us were our talented baristas to make irresistible coffee for you guys. We would also like to thank our great friends and wholesale customer, Det Vide Hus who were represented behind our coffee on wheels with the best volunteers you could think of! ⁣

We hope you enjoyed the festivities as much as we did, and hope to have many more gatherings at the lovely P1 Event Space!

We have shaken things up a bit with our good friends at Prufrock Coffee London. ⁣

As part of the Barista Development Programme, a master class for our baristas, where they get to extend their knowledge on the profession, our Bar Manager at Jægersborggade, Anna Ida, has reached the Master Level. This means, that Anna Ida has taken the trip to London and switched places with their General Manager, Ewelina. ⁣
⁣
We are so happy to host Ewelina for the next few weeks. Take a stroll to our Jægersborggade coffee shop in Copenhagen and meet Ewelina who will be behind the bar. If you reside in London, you can get an authentic Coffee Collective experience as Anna Ida will brew caps for the next few weeks at Prufrock Coffee! ⁣

This is just the first out of many swaps as we will continue to work with a handful of roasters across Europe in exchanging knowledge.
