Yesterday's Strawberry Rhubarb Pie baked perfectly. How about a recipe?
2 c flour
6-8 tbsp ice water
4 c rhubarb (small pieces)
4c strawberries (quartered)
Zest and juice of one lemon
1/2 c sugar
1/2 c brown sugar (light)
5 tbsp cornstarch
1 tbsp vanilla
For the pie crust, combine flour and salt then cut in butter until well combined. Moisten with ice water until a malleable dough is formed. Divide in half and roll one half to 1/8 inch thickness for use, make bottom pie shell.
For filling toss lemon with fruit. Mix sugar, brown sugar, and cornstarch until smooth, then coat the fruit. Add vanilla.
Pour filling into pie shell, use the other half of pie dough to top. Brush pastry with milk and sprinkle with sugar before baking at 350 F for 50-60 minutes, or until filling is bubbly and crust is browned.
