One of my all time fave meals is veggie stir fry with tofu 😋 Made this veggie stir fry with mushroom, carrot, broccoli, red & green pepper, onion, garlic, and ginger 🥕🥦🌶 I never measure, I just throw in whatever I got 😂 I sometimes add in other spices but for this I just wanted lots of garlic & ginger (probably 3-4 tbsp of each... don’t judge 😬). Served it with @explorecuisine edamame spaghetti which is one of my fave pasta alternatives 💯 .
Also did up some crispy fried tofu in a pan which I always get questions about because getting your tofu extra crispy is not easy 😅 Well, it IS easy but it takes a lot of patience. If you arent avoiding oil, the easiest way to get it crispy is to heat a generous amount (3-4 tbsp) of oil on medium heat and pan fry for 10 mins or so flipping every 1-2 mins until all sides are crispy (this is also the extra delicious method in my opinion), but if you are trying to make it a bit lighter, you can do it with a quick spray of oil in a nonstick pan on medium high heat and it takes around 20 minutes, flipping and moving around every 2-3 mins. I don’t know why oil makes it cook quicker, I am not a scientist 😂 . .
