Cookies & Cream Cheesecakes
1 bag @Highkeysnacks Double Chocolate Cookies
2tbsp salted butter
8oz cream cheese
1tbsp vanilla extract
1/4 cup erythritol (@Lakanto )
2 tbsp chocolate chips(@lilys_sweets )
Preheat oven to 375 degrees.
Crush or put the Highkey Cookies in a food processor until mostly grinded. Melt the butter in a bowl and add the Cookie crumbs in. Mix together well and divide equally into 6 cupcake tins. .
Mix room temperature cream cheese, egg, vanilla, and sugar in a bowl until well blended. Crush the chocolate chips into small pieces and fold into cream cheese mixture. Divide equally on top of the crust. .
Bake for 20 minutes. Allow to cool before placing in the refrigerator. They taste much better after a couple hours. I melted chocolate chips, coconut oil, and a small amount of sugar in a bowl and drizzled over the top. .
