Today Public Institute of @ljubljanacastle is celebrating its 9th birthday🎂🎉. And I decided to celebrate it properly, with a cake. I got the recipe from @slascicarna_lolita patisserie and I'll share it with you😊. Here we go: 🍓🍰 RECIPE FOR LOLITA CAKE WITH STRAWBERRIES AND VANILLA CREAM
250 g of fresh strawberries
2 tablespoons of sugar
1 tablespoon of orange liqueur or 1/2 orange
4 eggs (room temperature)
4 tablespoons of sugar
2 tablespoons of cornstarch
2 tablespoons of flour (smooth, type 500)
250 g of whipping cream
2.5 g of gelatin
1 tablespoon of sugar
pod of vanilla seeds or vanilla sugar
Wash the strawberries and remove the stalk. Cut them into cubes approx. 1 cm thick. Add sugar and orange liqueur and infuse for approx. 2 hours at room temperature.
Strain the strawberries after 2 hours. Save the juice of the strawberries for later.
Whisk the eggs and sugar until thick foam. Sift flour and starch, then add slowly, spoon by spoon, into the egg mixture. When nicely mixed, pour into a 20 cm diameter aluminum model. Bake at 170 degrees approx. 12-15 min. When the cake is baked turn it upside down to cool slowly.
While the cake is cooling, we start preparing the cream. First, soak the gelatin in cold water. Whip the cream with sugar and vanilla, until it's 3/4 thick. When the gelatin is sufficiently watered, drain it. Add some of the cream to the gelatin and heat it in the microwave. Then mix it all together well. Add the strawberries to the cream and mix well again.
Cut the cake crosswise and put the first half back into the model. Moisten the lower bottom of the cake with the juice left over from the strawberries, add cream and strawberries (approx. 2 cm thick). Repeat the process. Put in the refrigerator for approx. 1 hour.
