You are an amazing community!!! I was floundering somewhat, but @livingbyrv noticed, and bless her heart, she reached out to me, and then spent an evening messaging with me as I sorted myself out. So here's the gist.

I hit my halfway point, 50 lbs, and then I stalled. A long, dark, cold Minnesota winter closed in. Two long road trips in an over-packed car, driving through food as well as literal deserts. Holidays. Visiting family who is most definitely not WFPB, and not having room in their fridges or turns in their kitchens, and watching them make every non-compliant food and treat imaginable.

I stayed as close as I could to #wfpb , but it was a circus. I gained 12 lbs in 3 months. My terror that this would get out of control, and that cancer would come back for a third time, caused daytime anxiety as well as nightmares. Not even when sleeping could my thoughts rest. Somehow I kept it completely together at home, but this situation translated into off-plan eating whenever I was away from home.

I took the scenic route, and now it's time to get back on the highway. I didn't want to post updates before I lost that 12 lbs, but a few weeks stretched into months... And then I got that message, asking how I was doing.

And that, folks, is what makes all the difference! I'm down 3 lbs since @livingbyrv tapped me on the shoulder.

I do this for others all the time. I try to be observant, to be a good friend. But I don't ask for help, and that needs to change. Thankfully, someone noticed.

I'm back, thanks to a stranger who is a friend. Who noticed. Who cared. I'm back, wiser to the long journey that is a #wholefoodplantbased life.

I'm back. Thank you, dear friend! And dear community as well. You're all an inspiration and a wealth of knowledge and support. I'm here for you, too.

When I went plant-based there were certain foods I really missed. In particular I longed for a bagel, a smear and lox.

So instead of denying myself this Sunday morning staple, I figured out a vegan and healthy way to do it.

Instead of a bagel I make potato waffles. Then I top that with cauliflower hummus or pea guacamole and carrot lox.

For those who asked for my oil-free red pepper hummus recipe, here ya go... - 2 15 oz. can chickpeas, rinsed well
- 1-2 tbsp. chili pepper paste - fresh parsley to your liking - juice of 1/2 lemon
- 1 tsp. minced garlic
- 1/2 tsp. paprika - 1/2 tsp. sea salt
- 1/4 cup water - add more or less depending upon your desired consistency. 
Combine all ingredients and blend in a food processor. Adjust flavoring as needed. I sometimes like to use chipotle chili powder or smoked paprika. .

Some people progress with gentle nutrition guidelines, macros, avoiding certain foods that don’t make them feel good, planning in desserts to avoid deprivation, enjoying tea before bed, whatever else! 👏 For others, any food rules make them feel restricted and they need to first learn to trust themselves.
