{NEW RECIPE} Whole Orange and Maple Oatmeal Muffins ✨

Today I’m bringing back a recipe I first shared a year and a half ago—it’s my favorite muffin of all time! I created these muffins for my first cookbook, #SimplyCitrus, but the recipe was not photographed so it was one of the first ones to get axed out of the book when space became an issue during the design process. No delicious recipe will ever be left behind though! 💪🏼

Today I baked a new batch and took the opportunity to snap new pictures because I felt like the previous ones didn’t do this wonderful treat justice 😬 Hopefully this will make you want to try these muffins because they truly have it all: They’re packed with good-for-you ingredients, they’re incredibly aromatic and moist, and they have that irresistible crunchy top. 30g very ripe avocado/ 50g silken tofu/ 100g kiwi/ 
10g chocolate flavoured vegan protein powder (I've used CHOCO peanut flavoured protein powder @veganz!)/1,2 ml maple syrup/stevia (to taste) .
Put everything in a blender until it reaches a creamy texture! Let it rest in the fridge overnight and enjoy for breakfast/dessert/anytime!😛

**RECIPE TESTING**
This is not my original recipe but I am thinking of switching it up a bit. The taste is a definite 10/10 but the muffin is a bit crumbly the next day, so eat them fast! 😂 (Not really a problem in my house🤣) •

This recipe is dairy free and egg free. I am whole foods, plant-based and I do consume pasture raised organic eggs so I am thinking of tweaking the measurements and adding an egg next time to make a more cake-like muffin. (Look for future post) 
As is this recipe is still approved by a picky 4 year old❣️It’s an easy way to satisfy her sweet tooth with out processed sugars 👏 
So if you live an egg free, dairy free lifestyle or even if you don’t this recipe is definitely worth a try! •
Recipe •

Mix dry ingredients•
•1 cup of oat flour ***•
•1/2 tsp of baking soda•
1 tsp of baking powder•
•1/2 tsp of cinnamon•
•pinch of salt•
•

Combine wet ingredients•
•1 mashed ripe banana•
•3 tbsp of almond butter•
•1/2 cup of almond milk•
•1/4 cup of maple syrup
•1 tsp of vanilla almond extract •

***If you don’t have oat flour, just blend rolled oats in a blender to make your own❤️• Mix together wet and dry ingredients and then add 1/2 cup of semi sweet chocolate chips. Distribute even to 6 small muffin tins and bake at 350° for 20 mins💓

Heute waren wir nach langer Zeit mal wieder im @ingrids_einfach_geniessen in Maichingen (Sindelfingen) und posten auch endlich mal wieder etwas... Frühstück ist doch einfach eine wunderbare Mahlzeit und mit diesem leckeren Teller kann man auch nur gut in den Tag starten.
