Gluten free, dairy free & vegan chickpea brownies!
I’ve baked these fudgy pieces of goodness more times than I would like to admit! 📝 Here’s the recipe:
INGREDIENTS 🍴1 – 15oz can chickpeas, drained and rinsed
🍴1/2 cup nut butter (I use almond butter or peanut butter)
🍴1/2 cup dates (around 10 dates), you can also use honey or maple syrup
🍴1 Tbsp melted coconut oil
🍴1 tsp. vanilla
🍴1/4 cup almond flour
🍴1/4 cup cocoa powder
🍴1/4 tsp baking soda
🍴1/4 tsp baking powder
🍴1/4 tsp salt
🍴1/2 cup chocolate chips and more for sprinkling on top!
1. Preheat oven to 350F.
2. In a food processor, blend chickpeas, nut butter, dates, coconut oil, vanilla, and half of the chocolate chips.
3. Once blended, add in almond flour, cocoa powder, baking soda, baking powder, and salt.
4. Once creamy and smooth, pour into greased 8×4 loaf pan and sprinkle with extra chocolate chips.
5. Bake for 25-30 minutes.
