Okay so I think I accidentally made my new favorite dish...tofu fried rice and quinoa!! I only had super soft silken tofu and wanted to fry some but it started to break too easily and so I made a peanut butter and soy sauce marinade and added rice and quinoa and basically fried it. So it’s my new favorite thing:) you get some carbs and protein and fat so its great! •

I wanted to share a more personal side of me in this caption today. With everything that’s been going on, I’ve been keeping myself busy during this time with things like ACT studying, reading, working out, watching Netflix, rollerblading and cooking.

I’m able to spend a lot more time with my family so that’s a silver lining to this incredibly sad and terrible situation. But, as I’m sure everyone is experiencing, the weight of all that’s going on in the world gets to me. So, I wanted to share something that has really been helping to keep me positive...

It’s Gratitude Journaling!! I write some things (as many as you feel like, it could be 1, it could be 100) in my journal at night before I go to bed. I focus on writing little things in my day that I’m grateful for so that things don’t get repetitive. I write about things I did, moments I shared with my dog, family, anything! -
Not only does this allow me to reflect on my day and the experiences I had in it that allow me to think “Aw, today was a good day” but gratitude journaling has programmed me to realize those little things that I’m grateful for when they are actually happening, which has had a huge positive impact on my days as I live them out!

A simple snack for Austin while he’s home. I’ve been really trying to switch it up for him so he’s not constantly eating the same things over and over. The best thing about this snack is that the topping choices are endless. ⁣

These are graham crackers (obviously 😂). One is topped with peanut butter and mini chocolate chips, and the other is topped with hazelnut spread, walnuts and mini chocolate chips. It literally takes 2 seconds to make and he loves them. What are you guys feeding the kiddos?⁣

This is a huge mix of vegetables : lettuce, carrots, green aspargus, olives, fennel, chickpeas and spring onions,  topped with sesame and flax seeds.

The dressing is tahini-based with coconut cream, lemon, sesame oil and garlic powder. If you like it spicy like me, you can add some sriracha mayo on top 😍

Det bästa med sommartid är att jag äntligen kan ta finare mat-bilder 😄🌻
En typisk måltid när vi vill ha en näringsrik, mättande middag brukar se ut något sånthär:
• En grön bas
• Någon bra kolhydrat (oftast quinoa eller svart ris)
• Gärna någon frukt (ex; mango/jordgubbar/melon)
• Grönsaker i olika färger (olika färger innehåller olika typ av antioxidanter och näring som är super bra för dig)
• Något protein (finns ju såklart massa i quinoan och soyabönorna med idag blev det även lax) - Stekte laxen med chilliflakes i kokosolja någon minut på hög värme.
• Toppad med picklad rödlök
