• In a large skillet cook your chicken with a little avocado oil, garlic powder, ground ginger, salt, and pepper.
•In a small bowl mix together 2Tbsp peanut butter, low-sodium soy sauce, garlic, 1Tbsp honey, and 1/4 cup lime juice, 1Tbsp toasted sesame oil to make dressing
• To serve, place sweet potatoes and onions at the bottom of a bowl. Then, add your cooked chicken with some spinach and sliced avocado. Lastly, top the bowl with toasted sesame seeds, fresh cilantro and dressing.
• For a meatless option substitute chicken for chickpeas.
