Roasted cassava: pink salt and black pepper, tossed in amaranth grains flour (farari atta) with a drizzle of olive oil, roast in the oven = yum! 😋
I’ve been experimenting with farari atta in my cooking and for this roast it has given an extra bite and texture to the cassava. Topped with fresh coriander and a squeeze of lemon juice, this is just soooo good!
