I’ve been enjoying my time in Arkansas with my family. I have over ate. 🥂🍩🍝Been lazy af. 😴 Stressed about the coronavirus. Almost cried trying to get used to online learning for all the 4 kiddos. Celebrated my anniversary. Tried to workout and be healthy. Failed. Re-tried. Just back and forth .... I have been trying to get my head back into fitness mode but it’s HARD. Decided not to rush anymore. I ain’t going anywhere anyways. #stayhome ✨ It’s inspiring to see everyone workout out at home and still giving it their all but we can’t all be like that & we don’t need to compare. CHIA PUDDING 
I made mine based off of @simplyquinoa recipe! I tweaked it a little bit and it was so good!
3.5 tablespoons of chia seeds • 3/4 cup almond milk • 1 tablespoon maple syrup • a couple scoops of @greatlakesgelatin collagen powder • strawberries • banana • @jifbrand natural peanut butter
I popped it in the fridge overnight and it was ready in the morning!

NEW SNACK ALERT!!!
Behold, the chia seed pudding with pureed fresh blueberries and sliced fresh strawberries. 
This snack is filled with protein, vitamin C, and antioxidants. And boy, is it refreshing!

I felt something was missing so i added some pureed banana and it HIT THE SPOT! 
INSTRUCTIONS:
-get a cup of either almond or coconut milk (i prefer coconut milk) and add 2 tsp of chia seeds. Stir immediately -add vanilla and either brown sugar or honey. And stir somemore.
- wrap the bowl and place in the refrigerator for 24 hours -  the chia seeds create a gelatin so the pudding will be thick. - next, get some blueberries and throw in the blender for a couple of seconds and add ontop (i added chia seeds to the blueberry puree also but totally optional). - - - then cut up some fresh strawberries and there you go, chia seed pudding **optional** add some fresh bananas either pureed or sliced and it will totally change the taste to even more amazingness!
