Super simple nearly one pan dinner 👍🏻 oven roasted chicken thighs with asparagus and cherry tomatoes over farro topped with goat cheese.
Make 1 cup farro: 2 cups water, 1 cup farro in a small pot, bring to a boil cover and let simmer on a low heat till soft 30 mins.
Oven at 400F, on a large sheet pan lightly coat one package bone in and skin on chicken thighs in olive oil, sprinkle with salt and pepper, half a lemon of lemon zest and a dash of dried thyme.
Put in the oven for 15mins.
Meanwhile trim asparagus. In a bowl Toss asparagus and tomatoes in a little olive oil add a dash of salt and pepper and the rest of the lemon zest from one lemon.
After the first 15 mins, add the veggies to the sheet pan around the chicken, place back in the oven for another 15 mins. At this point chicken should be golden and cooked through, asparagus will be soft and starting to brown and the tomatoes will have all burst.
Serve the chicken and veggies over a nice pile of farro with a good sized slice of goat cheese on top. The goat cheese melts into the farro and makes a nice creamy sauce with the veggies and chicken
