Took a trip to @bangkok54 grocery and ended up with a whole southeast Asian feast 👏🏽 which means the best leftovers for lunch! I highly reccomend taking a trip to Arlington or NE DC - great spots for international markets at cheap prices.
🍜 Clockwise from left: my take on a Vietnamese noodle salad with fish sauce, lime juice shaved ginger, and sriracha for the sauce. toppings of peanuts, cilantro, cucumber, Thai basil and Thai bird Chile. You could easily sub jalapeño and mint in place of Chile + Thai basil! Not really a recipe per say, but go light on fish sauce and then adjust if needed.
🍲 Green coconut curry chicken (similar process to my braised coconut chicken thighs but with more ingredients). Made with chicken thighs + bell peppers, braised in coconut cream, fish sauce, chicken broth, cilantro,Thai basil, jalapeño, green onion, and some @thaikitchen green curry paste.
🍗 @chrissyteigen chicken satay recipe (cravings 1) followed almost exactly, but I used coriander and ginger in the marinade instead of cumin. I also simplified her peanut sauce recipe to include 3 ingredients: raw peanut butter with the oil, coconut aminos, and sriracha (and some hot water to thin). Coconut aminos has natural sweetness so the sugar didn’t seem necessary.
