​CUMIN-SPICED BLACK BEAN, SPINACH AND SWEET POTATO QUESADILLAS with guacamole, salsa and mango slices. For the quesadillas: mash black beans and roasted sweet potatoes with some cumin, salt and pepper, Heat 2 tortillas (use almond flour tortillas to keep it #glutenfree) over medium high add some of the sweet potato mash with some sautéed spinach and onion. Fold over after two minutes and cook for about a minute more on each side. ​
​Easy peasy lemon (or should we say salsa?) squeezy!

Fresh veggies are in the hooouuuse (you’re supposed to read that like you’re hearing it over the loud speaker at a NBA game!!! 🤓). After eating frozen veggies for the past few days I was ecstatic to make a fresh salad for lunch today! Because the weather was so incredibly beautiful, I thought it would be fun to have an outdoor picnic with the boys! We ended up playing outside the rest of the day! We played soccer, rode dirt bikes, made forts in the woods and dug for worms (the boys, of course)! ❤️ Grateful for a good day with my littles! 
For my lunch, I mixed together mixed greens, watercress, microgreens, avocado, beets, olives, cucumber and lemon dressing! So good!

Made these a few days ago for a lunchtime in the q, and they did NOT disappoint! Stuffed them in a low-carb @josephspitabread with hummus, tahini, and tomato, topped with ebtb seasoning & called it a delicious meal!⠀

All in all, it was a one-bowl prep, done and in my mouth within the hour, or less than 30 if you choose to skip the refrigerator step, and just so freaking delicious and fun to make!⠀

A good stir-fry is a tasty balanced meal my family can all agree on. This Beef Noodle Stir-fry made with @mikesmightygood Savory Beef Ramen [ad], sirloin beef 🥩 and lots of veggies is packed with tasty goodness. 
Mikes Mighty Good Craft Ramen 🍜 is made with organic steamed noodles and quality ingredients so I know I’m feeding my loved ones something good. It's flavorful, nourishing and the ultimate comfort food! .
To make this scrumptious beef noodle stir-fry bring a pot of water to a boil. Add the ramen noodles from two packages of @mikesmightygood Savory Beef Ramen and cook until they just become tender and then drain. Add the noodles back to the pot and toss with toasted sesame oil. On the stovetop in a skillet heat two tablespoons of your choice of oil. Add the veggies and sauté until they start to tender. I used red onion, garlic, broccoli, red bell pepper, mushrooms and chopped scallions. Then add the beef and one of the seasoning packets from the @mikesmightygood Savory Beef Ramen and toss until the beef is cooked. Toss in the noodles and enjoy. I also added some soy sauce and sesame seeds for extra flavor. Feel free to change it up and use @mikesmightygood chicken or vegetarian options instead with chicken, shrimp or tofu but the beef is what I had on hand so it worked. heard it was national burrito day so of course had to have one for dinner 🤤🤤 and supported local as well! @localburrito has the best fresh and organic burritos with whole ingredients! we were lucky enough to have a dozen of their burritos (that are kept frozen) delivered on our doorstep today just by placing an order and venmoing them 😍 it’s just that easy to support local, no matter where you are! check out what your local restaurants/businesses are doing to provide for their communities because it’s so so important right now to keep supporting them during these hard times 💓 but happy thursday and here’s to the weeeeekend 🥳🥳
