Weekend mornings are for elaborate brunches 💁🏼♀️ Tofu scramble is always my brunch of choice on weekends 😋 I’m always team savoury for breakfast, and this scramble is just perfect 🙌🏻 .
Tofu scramble directions: Sauté a diced potato in a pan for around 10 mins until it gets soft - you can add a bit of water halfway through cooking to help steam the potato. Add 3/4 cup diced onion & 3 cloves garlic to the pan and sauté for 2 mins, then add 1 red & orange pepper, 2 cups chopped mushroom, and 1 cup diced cherry tomatoes 👏🏻 I season throughout the process and use smoked paprika, onion powder, garlic powder, dill, salt, and pepper (didn’t measure, just tasted every couple of mins). Then add one block of @sunrisesoyafoods extra firm tofu all crumbled up to the pan and add 1-2 tsp turmeric, cook for another 3-4 mins, and add more seasonings if you want 😋 .
Happy Saturday! 🤗 I had a busy but wonderful day today, starting with finally finding my wedding ring and bringing it home with me 😌 The wedding is still 8 months away and now I’m patiently waiting to be able to wear it 😆 Met up with @laurajeanfitness for coffee this afternoon after being internet friends for several months and it was so lovely meeting in real life! I love how many friends I’ve made from being on Instagram and this was the first time I’ve ever met up with someone from Instagram in person and I just love how this community brings people together ☺️ Plans for this evening include cooking some food and watching some Netflix 😁 I started re-watching one of my fave Netflix shows last night and forgot how good it is - highly recommend the haunting of hill house if you like spooky and horror 😬 Hope you all are having the loveliest evening!! 💕 - 27 minutes ago
