The cold pressing technique helps preserve the nutrients in olives and natural polyphenol compounds that can be lost if the oil is processed using excessive heat or chemical solvents.
So, besides looking for “cold pressed” or “extra virgin” on the label, you want to make sure your oil is 100 percent extra virgin.
