For my easy quick dinner tonight:
GRILLED CHEESE CROISSANT 🤩🤩 with a side salad n my fav @lacroixwater.
The avg working adult has no time or energy to stop by the grocery store every night to whip up a 3 course meal, so I opt for what I have in the fridge. I used left over shredded rotisserie chicken, sharp cheddar cheese & a bakery croissant for the grilled cheese. Mixed greens, cucumber, tomato, some more shredded chicken, & an avocado oil vinaigrette. My long-term goal is to cut out meat completely, but as a life-long carnivore, I’ll be strict to cut beef & pork out for now🥶 •••
To make this dinner keto, all you need to cut out is the croissant! The chicken n cheese gets you the high fat content with a fresh salad side to keep the carbs low. You can always homemake a vinaigrette using a keto-friendly recipe online to ensure a low-carb dressing. I would just grill the chicken with some salt, pepper, maybe cayenne (I love spice), melt the cheese just enough over & serve on a fresh lettuce wrap! ••
