WHO LOVES SCONES? 🙋🏽♀️ When I was a little kid I LOVED scones, and call me old fashioned but I'm still incredibly partial to these bad boys.

Gluten-free, vegan scones - makes approximately 9 scones
1 1/4 cup almond meal
1 1/4 cup gluten-free flour (or sub plain flour if not gluten-free)
2 heaped teaspoons baking powder (ensure gluten-free if necessary)
1/4 teaspoon baking soda
2 tablespoon lemon juice
2 tablespoons maple syrup (or sub any other similar sweetener)
200 ml plant-based milk
To serve: whipped coconut cream/coconut yogurt and your fav jam
Preheat oven to 180 degrees Celsius. Place all the ingredients in a bowl and mix well (no need to sift in the flour, ain't nobody got time for dat!). Add the milk a little bit at a time until you get a soft dough that’s firm enough to mould easily. You can also add a tiny splash more milk if it’s looking too dry.
Line a baking tray with greased baking paper and use your hands to shape the dough into little balls and then flatten the top and bottom – do this until you have 9 balls.
Bake in the oven for around 20 minutes until browned and an inserted skewer comes out clean. Leave to cool slightly before slicing in half and smothering with toppings. - 2 minutes ago
