INGREDIENTS:⁠
3/4 cup / 175 ml all-purpose flour⁠
3/4 cup / 175 ml whole wheat flour (or gluten-free alternative) ⁠
1/4 cup / 50 ml millet⁠
1 tsp / 5 ml baking powder⁠
1 tsp / 5 ml baking soda⁠
1/4 tsp / 1 ml salt 1 medium egg⁠
1/4 cup maple syrup ⁠
1 mashed ripe banana ⁠
1 cup / 250 ml plain yogurt, 1% MF or less⁠
1/4 cup / 50 ml canola oil⁠
1/4 cup / 50 ml freshly squeezed lemon juice⁠
1 tsp / 5 ml lemon zest 3/4 cup / 175 ml fresh or frozen blueberries⁠

DIRECTIONS:⁠
Preheat oven to 375˚F (190˚C). In a large bowl, combine all-purpose, whole-wheat flour, millet, baking powder, baking soda and salt. In a separate bowl, whisk together egg, maple syrup, mashed banana, yogurt, canola oil, lemon juice and lemon zest. Add wet ingredients to dry ingredients, whisk together to combine. Gently fold in blueberries. Pour batter into 16 non-stick or paper lined muffin cups. Bake for 20 to 22 minutes or until cooked through (when a knife inserted in the centre comes out clean).⁠

The old and good cauliflower that we all know with a new twist, that you can make while you prep your meals for the week by using the spices or the sauce of another dish. for example baked chicken as we did when we made the recipe from the previous post😉😌. Прекрасное дополнение это печеные овощи.Я впервые готовила японские баклажаны.Меня поразила их форма, а прочитав об их вкусовых качествах я не смогла удержаться от того что бы их приготовить. Цветная капуста частый гость на нашем столе, но хочется как то разнообразить ее вкус, так что и она получила сегодня новый вариант приготовления. Начнём с баклажан,нам понадобиться 6 штук.Вначале их надо помыть и просушит и обсушить. Нарезать по полам и на разрезе сделать надрезы в виде решётки. Тем самым мы улучшим проникновение соли в мякоть баклажанов. Посолить и оставить на 20 минут. Разогреть духовку до 200градусов. Тем временем сделать соус: 7 зубков измельчённого чеснока, 7 столовых ложек оливкового масла и 4 ст.л.лимонного сока,чёрного перца. Через 20 минут обсушить баклажаны, выложить на противень и полить соусом, сверху посыпать копчёной паприкой. Выпекать 20 минут.Вместо японского баклажана можно использовать обычный.  Цветная капуста  около  килограмма все очень просто разрезать на соцветия  посолить и полить соусом:4 ст.л.оливкого масла 1ст.л дижонской горчицы с зёрнами ,1ст.л дижонской горчицы, 2 ст.л  бальзамического уксуса ,2 ч.л.коричневого сахара, 8 зубков измельчённого чеснока, смесь сухих итальянских трав .Выпекать в разогретой духовке до 200 градусов 25 минут.

Korean Fried Chicken 🇰🇷 This spread was an absolute feast from a few weekends ago, and omg I cannot recommend enough bringing this into your life 👀 I got so excited making these, I decided to try to make a TikTok of the recipe; I then got even more excited at the thought of eating them that I forgot to film the ending, too old for this 👵🏻 Anyway whilst no one will be watching my cooking videos anytime soon, here’s the method 🤓 I coated the wings in flour and fresh grated ginger before shallow frying and then moving to the oven; for the sauce I followed a @bbcgoodfoodrecipe , which is a mix of  gochujang, soy sauce, sesame oil, fresh ginger, garlic and dark brown sugar (I used less than the recipe says) 🧄 Wouldn’t recommend tasting the sauce immediately though like me, SO stupid and that sugar burnssss 🔥 👅 I also added water to the sauce as well as I wanted to fully coat the wings and originally this sauce was a thick boy 😲 Served with slaw and some sweet potato chips 🍟 Absolutely dreamy scenes 🕺 .

THE DEETS: Somewhat of a #latergram but this dish was too good to not officially share. I love it because it’s a great example of the versatility that comes with cooking vegan. I can’t think of any non-plant based dish that incorporates all of these veggies and still tastes so good. As usual it was super easy and took all but 20 mins. INGREDIENTS/INSTRUCTIONS ⬇️

INGREDIENTS: •Zucchini Noodles •Carrot Noodles •Sliced Cherry Tomatoes •Sliced Mushrooms
•Diced Avocado • @the_tofurky_company sausage •Garlic Powder/ Onion Powder ( my preference but fresh garlic and onion would work too) •Crushed Red Pepper •Salt/ Pepper to taste •

INSTRUCTIONS
1.Prep your veggies 
2.Put carrot noodles in oven at 425 degrees. ( I spray both the zucchini and carrot noodles lightly with avocado oil and add a dash or salt and pepper before the oven).
3. Wait 5 min and then add the zucchini noodles and continue to cook for 15 more minutes ( the carrot noodles take longer to cook). 4. While veggie noodles are cooking, add the sliced @the_tofurky_company sausage and mushrooms to a lightly oiled pan. Depending on how thoroughly cooked you want your tomatoes, you can ad them at this time or wait. 
5. When the veggie noodles are done, add them to the pan (you can also add the tomatoes at this point too.) 6. Season to your taste and allow of the veggies to sautéed. Do not leave them on for longer than 3-5 mins or else the noodles will get soggy.
7. Once you remove the pan from the heat and plate the pasta , add the diced avocados on top. 
8. Enjoy 🤍🤍

Today's recipe: mushroom stew with creamy polenta 🍄
Stew:
• one onion
• one pepper
• 2 tomatoes
• tomato sauce
• 125g of mushrooms
• sweet paprika
• salt
~sautee the diced onion and pepper~
~add salt and 2 teaspoons of sweet paprika~
~add the mushrooms, followed by tomato sauce and diced tomatoes~
~when all veggies are cooked, finish off with dried lovage leaves~

Polenta:
• 1½ cups milk
• 1½ cups water
• salt
~bring to a boil~
• 1 cup of polenta flour
~mix until thick consistency and add a small cube of butter when it's done~

Serve all together with sour cream on top.

Recipe by the one and only @madsrons! 
Easy, healthy STIR-FRY! 🍛🥢 vegan and gluten free! 
Step 1:
Dash of avocado oil on your medium heated frying pan 
Add any veggies that take time to soften (🥦🥕🌶🧅) into your pan and let simmer

Step 2: 
Make your sauce 🤪 while the veggies are softening 
4 tbs coconut aminos (healthier version of soy sauce) 
2 tbsp PB🥜
Freshly chopped garlic🧄 & ginger (however much you’d like, we did one each) 
1 tsp of salt🧂 
1 tsp of pepper
1 tbs of Worcestershire sauce 
2 tbs of sesame oil 
Half of a freshly squeezed lime
Mix together 
Step 3:
Once tender, add in leafy greens 🥬 that take minimal time to cook (spinach and bok choy) and add in your sauce. Constantly stir. 
Step 4:
Boil water. Once boiled add rice noodles while sauce simmers. After the noodles soften (approximately 2 minutes) add them into your stir fry and mix together

Step 5:
Plate and garnish with your choice. We used lime, avocado 🥑 and/or 🍅, enjoy!!!! 🥢🍲 .

And to a certain extent, this is still true! But when I look back, I see that I wasn’t healthy!.

My diet before was very yellow, very processed, and the majority of my protein and vegetables were consumed at dinner time, if at all during the day! I was working out nearly every day, but I wasn’t fuelling my body for exercise, and looking back it’s astounding what chemicals I was putting in my body, and ‘chemicals’ being the operative word!.

Processed foods are full of chemicals, some that your body doesn’t even recognise, or has a lot of difficulty breaking down to find any ‘good stuff’ in it, so if you’re wondering why you have little energy, yet seem to be eating regularly, have a look at ‘what’ you’re eating.

𝑾𝒉𝒂𝒕’𝒔 𝒄𝒉𝒂𝒏𝒈𝒆𝒅 𝒇𝒐𝒓 𝒎𝒆 𝒊𝒔 𝒕𝒉𝒆 𝒒𝒖𝒂𝒍𝒊𝒕𝒚 𝒂𝒏𝒅 𝒗𝒂𝒓𝒊𝒆𝒕𝒚 𝒐𝒇 𝒇𝒐𝒐𝒅 𝑰 𝒆𝒂𝒕 𝒏𝒐𝒘.

I’m now so passionate about nutrition and fitness that I took a course in nutrition last year so I could help others. I see it myself and I can pinpoint exactly what I have eaten if sometimes my energy just plummets! I still enjoy the treats, but everything is in moderation now, and I focus on healthy portion control, making sure I’ve got a good balance of all those macronutrients, and looking at non-processed alternatives to those treats - some ‘alternatives’ are so much better too!.

I also apply this for our daughter, when I learned about nutritional labelling, and looked at exactly what goes into some children’s food (yogurts as an example), it was scary!! And for Kaya, it’s certainly not that she doesn’t eat these things, she’s 3 and her diet is literally fish fingers and alphabites, but she does ask for broccoli, so small wins!!!.

So if you’re doing ‘everything’ yet still not getting results, have a closer look at what you’re eating.
