CRISPY BUFFALO CHICKPEA TAQUITOS 🌮

If you're a fan of Mexican cuisine this recipe is a must try.
•
•⠀⁠
📋 Ingredients:
▪10 small tortillas⠀⁠
▪1 tbsp vegetable oil
▪1 medium sized onion, chopped
▪2 cloves of garlic, minced
▪1 bell pepper, chopped
▪1 1/2 cups cooked chickpeas (or one 15 oz can, drained and rinsed)
▪1/2 cup tomato sauce (passata)
▪3 tbsp hot sauce (or more to taste)
▪2 tbsp plant-based milk
▪1 tbsp balsamic vinegar
▪Spice mix: 1 tsp onion powder, 3/4 tsp coconut sugar (or brown sugar), 1/2 tsp garlic powder, 1/2 tsp smoked paprika, 1/2 tsp ground cumin, sea salt, ground pepper, and chili powder to taste

👩‍🍳 METHOD 
Using a fork, roughly mash the chickpeas in a bowl.
Heat oil in a pan/skillet over medium heat and add the chopped onion and bell pepper. Cook for 3 minutes, then add garlic and spice mix and sauté for a further minute.
Add all other sauce ingredients + chickpeas to the pan and bring the mixture to a boil. Let simmer on low heat for about 2-4 minutes, stirring occasionally, then turn off the heat.
Taste the mixture, if you want it spicier, add more chili powder to taste.
Preheat oven to 410 degrees F (210 degrees C) and line a baking sheet with parchment paper.
Place about 2 tbsp of the filling onto each tortilla and roll them up tightly. Place every tortilla seam-side down on the baking sheet, next to each other.
Brush them with a little bit of vegetable oil (to make them even more crispy).
Bake in the oven for about 15-20 minutes or until they are golden brown and crispy.
Drizzle with vegan cheese sauce (optional). Enjoy with your favorite dip!

Fudgy chocolate cake topped with a crunchy pecan pie topping? SOLD! 🙋🏼‍♀️ Chocolate and nuts combined are my weakness 🤤 I took my favorite almond butter brownie recipe with a few updates, baked it in a square pan instead of a loaf, and topped it with some pecan pie goodness 💯 
If you’re looking for a treat to make for the week ahead, this is an excellent option! Not to mention, it’s gluten free, refined sugar free and dairy free – if you’re into that kind of thing ☺️ Recipe is below 💛 Happy Monday!

HOW TO 👉🏼
Preheat oven to 350. 
Line a 8x8 inch pan with parchment paper and grease with coconut oil. 
In a bowl, combine:
1/2 cup creamy almond butter
1/2 cup coconut sugar
1/4 cup avocado oil
2 eggs, at room temperature 
Then stir in:
1/3 cup almond flour
1/3 cup cacao powder
1/2 tsp baking soda
1/2 tsp salt
Pour in batter. Bake at 350 for 12-14 minutes. Let cool in pan on wire rack for 10 minutes. 
In a bowl, whisk together:
1/3 cup coconut sugar 
1/4 cup pure maple syrup 
1/4 cup avocado oil 
2 TB full fat coconut milk

Stir in 1.5 cups roughly chopped pecans. Pour pecan mixture over cooled cake. 
Bake again for 20 minutes. Chill in fridge for at least an hour to set. Cut into squares and store leftovers in fridge.

 Curry — chicken, beef or veggie! ✨

A super easy meal prep option I like to prepare is curry — chicken, beef, or veggie based! Try out this basic curry sauce and pair it with some protein, carbs, and veggies for a simple meal that will last in the fridge for up to 4 days!

Recipe
1 TBS coconut oil 
2 tsp curry powder
1 (15oz) can full fat coconut milk
3 garlic cloves, minced
1 medium onion, chopped
2 TBS peeled and grated fresh ginger
2 TBS tomato purée 
1 red chili, minced
1/4 tsp salt
.
Directions
Heat the coconut oil in a pan over medium heat. Once heated add the chopped onion, grated ginger, and minced garlic. Cook for 2 minutes, until soft. Add the curry powder and salt and cook for 3 more minutes. Stir in the coconut milk and tomato purée. Bring to a simmer and then remove from heat. Once slightly cooled, move the sauce to a blender and blend until smooth. Use this sauce with whatever ingredients you wish to meal prep! Top with fresh avocado and chopped cilantro!

Cauliflower Rice (if keto or low carb)
Steamed or sautéed vegetables

What I love about this recipe is that it works for vegans, vegetarians, keto, paleo, gluten free, dairy free and low carb eaters! It’s so adaptable to anyone.
