If I can find time in my current torture chamber of deadlines/commitments, I’ll slice up a 📝detailing why Alba white truffles are special, and if you are thinking of chocolate pls get off Instagram and onto google pronto, why so expensive and also a heartfelt plea to stop pairing truffles with palate confusing Barolo or other commanding tannic dry reds. Fresh is not always better in the case of yellowfin tuna. This is practically a staple at all sushi restaurants but we elevate our yellowfin tuna to the highest level. This nigiri doesn’t get its vibrant red color from being served fresh. Yellowfin is a dark pink color, metallic taste and chewy if served fresh. We carefully age it for several days and then marinate it for hours in soy. When we cut it into nigiri, out comes this brilliant red color with wonderful umami flavors. Correctly aging fish to bring out these attributes is one of the signs of a true sushi master. Come try out our omakases! We have a few seats left for Dec 14, 15, 28 and 29.
