Roasted Veg Grilled Cheese Sandwich 🥪 ⁣

(Serves 2)⁣
1 zucchini sliced⁣
1 yellow squash sliced⁣
1 eggplant sliced⁣
1 red pepper sliced⁣
¼ cup red onions sliced⁣
Olive oil spray⁣
½ teaspoon dill⁣
Salt and pepper to taste⁣
2 tablespoons butter⁣
4 slices thick bread⁣
4 ounces Dill Havarti cheese divided⁣
4 ounces Gouda cheese divided⁣
⁣
👩‍🍳PREPARATION👨‍🍳⁣
1. Preheat oven to 400F(200C). ⁣
2. Toss the vegetables with olive oil spray and dill and season with salt and pepper. Bake for 10 minutes, or until vegetables are slightly tender.⁣
3. Brush the melted butter on one side of the bread slices.⁣
4. In a large cast iron skillet or electric griddle over medium low heat, place one slice of bread on the skillet, buttered side down. Add half the Dill Havarti cheese on top of the bread, then layer with half the roasted vegetables, followed by half the Gouda cheese. Top with a bread slice, buttered side up.⁣
5. Cook grilled cheese sandwich until golden brown and cheese is melted, about 4-6 minutes on each side.⁣

2 tbsp raw honey plus more for added sweetness⁣⁣
3 tbsp freshly squeezed lemon juice 1 lemon⁣⁣
1 tsp lemon zest⁣⁣
1/3 cup water⁣⁣

1. Pour the rinsed blueberries on the parchment paper and separate as much as possible.⁣⁣
2. Place the blueberries into the freezer and freeze overnight or for at least 4-5 hours.⁣⁣
3. Once frozen, add the frozen blueberries to a food processor, followed by the raw honey, lemon zest, lemon juice, and the water.⁣⁣
4. Process the mixture until the blueberries become crumbly, pressing down the mixture with a spatula as needed.⁣⁣

Ingredienti x16:
-4 albumi
-1 tuorlo
-1 pizzico di sale
-gocce di cioccolato qb
-scorza e succo di mezzo limone
-1/2 busta di idrolitina o cristallina (oppure 8 gr di lievito in polvere)
-30 gocce di dolcificante liquido (o 50 gr di zucchero di canna o 2 cucchiai di miele)
-20 gr di cacao amaro
-120 gr di farina di soia @vivibio_piugustoallavita @conad | G 24 C 11 P 36 (o 80 di integrale e 40 di amido di mais)
-2 cucchiai colmi di yogurt greco 0 @fage_italia
-80/100 ml di latte di mandorla @adezitalia
-2 pere piccole

Procedimento:
Montare a neve gli albumi in una ciotola con il sale e il dolcificante scelto. In una seconda, incorporare con le fruste il tuorlo, lo yogurt e il latte. Aggiungere in 3 volte la farina, poi il cacao. In ultimo scorza, succo di limone e agente lievitante, gocce di cioccolata e una pera a cubetti piccoli. Continuare a mescolare e versare in uno stampo di silicone per muffin. Tagliare una pera a fettine e disporla a raggio. 
Infornare a 180 gradi - forno statico - per 20/25 minuti. Per decorare, colata di cioccolato fondente sciolto al microonde e una fettina di pera fresca.
