To make the kelp noodles: drain and rinse the noodles and set aside. In a mixing bowl, squeeze the juice out of one lemon and add 1 tsp baking soda. Mix with a whisk. With your hands, add the noodles and mix around, coating evenly. Let sit for 15-20 minutes, mixing every 5 minutes. They should become a nice “al dente” texture. 
Add some of the following satay sauce along with chopped green onions and julienned carrots and bell peppers. I like to add cucumber slices, some crushed red pepper, and a spritz of lime juice. Warm in a dehydrator for 10-15 minutes or so. 
Raw Vegan Satay Sauce

1/2 red bell pepper

1/2 mango

4 tbsp almond butter, raw and unsalted

4 baby carrots

1/4 cup coconut aminos

2 tbsp toasted sesame seed oil 
2 tbsp rice vinegar

1/4 tsp Onion powder

1/4 tsp Garlic powder

1/4 tsp Cayenne powder

1/4 tsp Crushed red pepper

Pinch of Salt and pepper

Add the red bell pepper and mango (be sure to remove the skin and pit of course) to a blender. Add the almond butter, carrots, coconut aminos, sesame oil, rice vinegar, onion powder, garlic powder, cayenne powder, crushed red pepper, salt and pepper. 
Use a plunger to push the ingredients down as you blend. If you don’t have a high speed blender, chop your ingredients small and add a couple tablespoons of water. 
The dressing makes a large amount, so try it with a few recipes! It makes a great dipping sauce for spring rolls, salad dressing, mixed with noodles, or a dip for collard wraps

INGREDIENTS
1.5 lbs sweet potatoes about 2 large sweet potatoes
1 tbsp potato starch
1/4 tsp chipotle powder
1/8 tsp smoked paprika
1/8 tsp cayenne pepper
1 tbsp avocado oil
⠀⠀⠀⠀⠀⠀⠀⠀⠀
INSTRUCTIONS
Preheat the oven to 425 degrees F and place the rack on an upper third rung.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Peel your sweet potatoes, and cut them down the middle. Take each half, and make thin slices the long way. From each slice, make matchsticks. Try for uniform slices for even baking. Pro tip: you can leave the skin on if you'd like. Try for organic sweet potatoes if you prefer them with skin.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Soak them in a bowl of ice water for 30-60 minutes. Strain through a colander and rinse. Pat dry.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Dry out the same bowl and add the sweet potatoes. Combine the potato starch and spices and toss to make sure all the potatoes are coated. Drizzle oil over and toss to coat.
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Place the fries on two baking sheets and spread them out to make sure they're not touching each other. Pro tip: two sheets makes sure the fries are afforded even baking. If you crowd the pan the fries will steam instead of crisp up.

Lower the oven temperature to 400 degrees F. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Bake for 18 minutes, flip. Bake until they have reached your desired level of crispiness (about 8-12 minutes).

Chia Seed Pudding has been a go to recently because after you meal prep a bunch it literally takes 60 seconds to “decorate” it in the morning leaving NO excuses to skip breakfast.

🙌🏽 WHAT’S IN CHIA SEED PUDDING? —> chia seeds & milk of choice and that’s it! I like to also add coconut cream (optional) and @vitalproteins collagen peptides (optional/omit for vegan).

Chia Seed Pudding has been a go to recently because after you meal prep a bunch it literally takes 60 seconds to “decorate” it in the morning leaving NO excuses to skip breakfast. . 🙌🏽 WHAT’S IN CHIA SEED PUDDING? —> chia seeds & milk of choice and that’s it! Yep, I'm still sharing these photos of my Cold Stone Creamery Mud Pie Mojo recreation. Because 1) it was freaking delicious and 2) I got so many good shots from the shoot! 📷⁠⠀

When it comes to food photography, we often spend a ton of time preparing a dish beforehand and then the shoot comes and we may end up getting way less images than we'd hoped. After all that work, who wants to have to set up different scenes and change things around a few times just to get more content from the one shoot? 😅⁠⠀

My solution? I first set up my "grand shot" – the full overhead view of everything perfectly in its place, exactly how I want it. I get my overhead, I take some angled shots further back, then I move in closer. Zooms of overhead and angled. THEN I pull out my macro and get some of those suuuuper up close texture shots. I get some landscapes and portraits.⁠⠀
⁠⠀
Then, I turn off my camera and flash head, and I move things. I don't always mess with my backdrops, but I'll push a lot of the props and food from the "grand" scene to the sides and maybe re-plate or swap out one or two props for the food subject. I can sprinkle crumbs and herbs and spices and florals I used in the first shot around and then I can get at least a few more shots out of the second setup 🍦⁠⠀

Whenever I do this, I end up with at least 10 solid gold images, sometimes even more! Then I have more content to post here over a longer period of time. So there ya go – some tricks of the trade to hopefully help you get some more shots out of your next shoot.⁠⠀

I put this on repeat as I made one of these for our Proof Cookbook Club Dinner on Monday. I loved it so much, I made this for my lunch yesterday! This is an exquisite salad and is Heidi Swanson’s @heidijswanson - Cara Cara Chopped Salad from her Cookbook Near & Far. I’m taking advantage of Citrus 🍊 Season by also adding Moro Blood Oranges (AKA - Sicilian Oranges) in the mix! These are my very favorite Oranges and they are in peak season right now! This Salad also has Garlic Sautéed Radicchio, Celery, Chives, Mint, Chopped Toasted Peanuts and a sublime Lime Dressing... It was the perfect lite lunch yesterday and thinking of another one today... What is your favorite seasonal Citrus?🍊
