Weirdest things I see food bloggers doing when making these types of nuts:
—using egg whites/baking powder/baking soda
—putting them in the oven
Neither are needed. You’re making more work for yourself and your reader.

•Walnuts: 165 grams | 1.5 cups
•Sugar: 100 grams | 0.5 cups
•Salt: 3 grams | 1/2 tsp
•Maple Syrup: 15 grams | 1 Tbsp
•Water: 58 grams | 4 Tbsp.
1.Combine sugar, salt, maple syrup, and water in a sauté pan. Bring to a boil.
2.Add walnuts and toss in syrup. Cook until all water has evaporated. This is about 5 minutes. You will no longer see any steam.
3.Remove from heat.
4.Stir vigorously until mixture stiffens and coating turns from shiny to dull. This take about 5 minutes.
5.Pour on parchment paper. Separate nuts when they are cooling, but not cold.
Store in an airtight container.
