Crockpot Honey Garlic Chicken Thighs 馃崡 these were SO easy to make & the homemade sauce was to die for! I made what I thought was a big batch, but there was barely any leftovers after 馃き served on top of jasmine rice & I also whipped up a quick kale ceasar salad w/ pickled red onions, fresh parmigiano reggiano, breadcrumbs + croutons. Ingredients
3-4 medium zucchini
1 pound raw shrimp peeled and deveined
1 tablespoon olive oil
2 tablespoons butter
3-4 garlic cloves minced or crushed
1 teaspoon Italian seasoning or oregano optional
1/4 teaspoon of red pepper flakes adjust to taste
Salt and pepper to taste
Freshly grated parmesan or chopped parsley to garnish, optional

Instructions
Wash and trim the ends of the zucchini. Make the zucchini noodles using a spiralizer and set aside.
Heat 1 tablespoon oil in a large pan over medium-high heat. Add the shrimp to the hot pan, season with salt and pepper cook for 1 minute. Add the garlic, Italian seasoning, and crushed pepper to the pan. Cook for another minute per side or until shrimp is light pink and garlic is golden brown. Transfer to a bowl.
Add the Butter and zucchini noodles to the same pan, season with salt and pepper and cook for 2 minutes or until tender.
Return the cooked shrimp to the pan and stir through. Garnished with freshly grated parmesan cheese or/and chopped parsley.

Whole30, Day 7: *
Meal 1 - the last of this weeks frittata and some avocado. *
Meal 2 - I skipped lunch and took a nap instead. I regretted it later. I. Was. HANGRY!!!! *
Meal 3 - Roasted chicken, roasted potatoes and pan sauted asparagus and green beans. Huge hit,  as this is "normal" Sunday dinner type food! *

I went grocery shopping early this morning (thankfully because the power went out in town later and all the stores closed). I also got some meal prep done for the week: tuna salad, fruit in airtight containers, a new frittata, and some coconut chia pudding (not pictured). *

Week 1 reflections: TRUST THE PROCESS!!! My son is 100% "by the book" with the symptoms and reactions. That tells me that what I am doing is right and NEEDED for him! My daughter is doing great. She is battling some cold symptoms currently and I'm not sure if that is the process or actual sickness. For me, I feel good. Today, I'm tired and cranky, but have managed to talk myself out of the cravings and work through it. Watching TV is a HUGE trigger for me! I barely watched it this week. I am ready for week 2! *

SKILLET COOKIE. I was scrolling through my recipes to find one that doesn鈥檛 have chocolate chips, but guess what, could barley find any! Not sure what that says except that I have a mild obsession with chocolate. The clean stuff though! My Favorite chocolate chip brands are : @paschachocolate , @enjoylifefoods , @equalexchange , @hukitchen and @santabarbarachocolate . closing out the weekend with one of my favorite mini skillet cookie recipes! Chocolate swirl skillet cookie:
Serves one small size skillet
1 tbsp tahini
1/2 tbsp coconut oil or vegan butter
2 tbsp non dairy milk
2/4 cup almond flour
1 tbsp coconut sugar, or maple syrup
1/2 tsp baking powder
1 tbsp one of the above chocolate chip brands
sea salt to sprinkle on top

mix all ingredients in a bowl. Scoop into an oiled mini cast iron skillet, sprinkle with sea salt and bake at 350 for 11-13 minutes. center should be soft and gooey, maybe even slightly undercooked, which makes for the besttt texture IMO. Enjoy!

GET BAKES BABY!!! Well spaghetti squash baked that is.馃檴 Love a bake because you just throw some yummy things into a dish, heat, and done. Here I did a spin on a lasagna minus all of the carbs and a fraction of the cheese. Head to my stories tonight for step by step!

Ingredients:
1 lbs of organic ground turkey, chicken, or grass fed beef (You can also totally leave this out and go veggie)
1 medium spaghetti squash (or 2 small)
1 jar of Roas marinara or sauce of choice 
1-2 packages of frozen organic spinach thawed
4-6 oz of part skim ricotta (can also use vegan)
3/4 cup shredded cheese of choice
Salt, garlic powder, Italian seasoning to taste
Directions:
pregeat oven to 375
cook spaghetti squash and fork peel
Brown meat and add sauce and salt to taste, simmer for 5 minutes, then add squash and stir to combine
In a separate bowl mix spinach, ricotta, garlic powder, Italian seasoning to taste 
Layer meat sauce mixture then ricotta mixture until layered to the top (I use an 8x8 square baking dish)
Top with shredded cheese
Bake at 375 for 20-25 minutes option to broil for the last few to brown cheese

Ingredients: 1 lbs of organic ground turkey, chicken, or grass fed beef (You can also totally leave this out and go veggie) 1 medium spaghetti squash (or 2 small) 1 jar of Roas marinara or sauce of choice 1-2 packages of frozen organic spinach thawed 4-6 oz of part skim ricotta (can also use vegan) 3/4 cup shredded cheese of choice Salt, garlic powder, Italian seasoning to taste Directions: pregeat oven to 375 cook spaghetti squash and fork peel Brown meat and add sauce and salt to taste, simmer for 5 minutes, then add squash and stir to combine In a separate bowl mix spinach, ricotta, garlic powder, Italian seasoning to taste Layer meat sauce mixture then ricotta mixture until layered to the top (I use an 8x8 square baking dish) Top with shredded cheese Bake at 375 for 20-25 minutes option to broil for the last few to brown cheese . #sundaynightdinner #rachaelschwartznutrition #nutritioncoach #easyrecipes #eatrealfood - 17 minutes ago

Awesome recipe when you dont have the time to make a big pot to simmer all day! 
This was roughly 40 minutes from start to finish馃憤

I was not born a good cook, it required practise, progression and also patience.鉅
It also did not happen over night. I started cooking for myself completely when I left home at the age of 20. I鈥檝e made some disasters and also tried many things all leading me to find what works for me. Also note, what works for me, may not work for you.鉅

444 calories but can easily be increase or decreased to suit your requirements.鉅
Protein 51 Carbs 24 Fat 16鉅
--鉅
鈥 1 tsp coconut oil鉅
鈥 30 grams Chorzio - diced鉅
鈥 200 grams raw shrimp / prawns鉅
鈥 1/2 broccoli 馃ウ - grated鉅
鈥 handful of spinach鉅

1. Preheat pan to medium high.鉅
2. Add the coconut oil followed by the shrimp鉅
3. Once browned, remove on a plate to a warm place.鉅
4. In the same pan on medium heat add the chorizo. Allow oils to release. Then add the grated broccoli. Stir fry for a few minutes then add the spinach leaves.鉅
5. Throw the prawns back in the pan.鉅
6. Cook for a minute or two. Season with some salt and any fresh herbs or lemon juice.鉅
