Just over here living my Buddha bowl life 🙋🏼♀️ Meal prepped some of these on Sunday and I’m so glad I did because this has been my fave meal this week 😋 I did a base of sautéed kale and loaded it up with all my faves 💯 I roasted some sweet potatoes, broccoli, red onion, and chickpeas, seasoned with avocado oil, salt, and pepper 👏🏻 I kept it simple with the seasonings because I made a super delicious tahini maple dressing to drizzle over it all 😍 For the dressing, I mixed 2 tbsp tahini, 1 tbsp maple syrup, juice from 1/2 a lemon, and 2-3 tbsp of water (just enough to get the desired consistency). This is such a delicious dressing to drizzle on this kind of bowl 😁 .
Happy Wednesday! 🤗 It’s been a SUPER busy week for me at work which is a little stressful, but I actually don’t mind being busy because the time always passes much faster 🤷🏼♀️ I also got 10k steps in before I even left the office (yes, you read that right - I got in 10k steps in my OFFICE job today 😂) so you know it was a busy day for me (running back and forth to the photocopier surprisingly is an effective way to get steps in 🤔) Stayed up way too late last night watching Christmas movies with Ben and I’m extra tired today and hoping for an early night tonight 😴 I also did a story takeover today at @vito_app so head on over there to check it out and listen to my tips for getting enough water and other fun tidbits! 🤗 Hope you’re all having a great evening!! 🥰 - 26 minutes ago
