I found a few beetroots that I’ve forgotten about in the fridge so decided to make #glutenfree beetroot gnocchi!
.
Instead of boiling them I pan-fired them to make them a bit crunchy.
What did add as a protein source? 
Turmeric cod!! It was ridiculously easy to make and yummy! Just marinade the with turmeric, pepper, salt and a splash of coconut oil and grill it. .
I try to “eat the rainbow” to get different nutrients everyday and this once dish covered most of them. (maybe I should have added blueberry for “blue”😆)

冷蔵庫の奥底に眠っていたビーツを発見。
そのビーツを使って#グルテンフリー のニョッキを作りました☆

ニョッキはカリッとさせるために茹でずにフライパンで焼いてサラダにトッピング。
それに合わせたのは、#抗炎症効果 のあるターメリック風味にした旬のマダラ。
粕漬けにしておいたマダラにターメリック、胡椒、粗塩、それに少量のココナッツオイルをまぶして焼くだけ。
作るのもとっても簡単だけど、冷めても美味しい!

野菜や果物が持つさまざまな色は、植物成分による物ですが、それは栄養(抗酸化物質など)でもあります。
だから毎日「虹色」をとるように意識をすると、偏りなく栄養が撮れるんですよ〜。

この一皿だけでほぼ虹ができそうです🌈 青色にブルーベリーをトッピングすればよかった(笑)

Éste es un post dedicado a un paciente que está súper comprometido con su tratamiento. Por ahora, una alimentación vegana es lo indicado para él en su camino hacia la salud integral. 
Aquí les va una guía general para armar un plato vegano con todos los nutrientes. 
Cuando tu cuerpo esté adaptado a usar tanto carbohidratos como grasas como combustible, no será estrictamente necesario que incluyas todos los grupos en tu plato.  Cuando queremos empezar por comer comida real, alejarnos de lo procesado, el exceso de carne, controlar niveles de insulina y ansiedad; hacer un plato con varios macro nutrientes es una buena estrategia. 🥦1 1/2 taza o más de vegetales no almidonosos 🍠1/2 a 1 taza de vegetales almidonosos (papa, camote, calabaza de Castilla, betabel cocido) granos (arroz, maíz, avena integral sin gluten) o pseudo granos (quinoa, amaranto, trigo sarraceno, mijo). 🥗3/4 a 1 taza de proteína vegetal (tofu, lentejas, frijol negro, edamames, garbanzos, tempeh, chícharos)
🥑1 porción de grasa: aguacate, nueces, semillas, corazones de hemp, almendras, macadamias, aceitunas, aceite de oliva extravirgen, aguacate o coco. 
En este plato combiné brócoli y camote horneados con aceite de aguacate, levadura nutricional, ajo y sal; frijoles negros cocidos y corazones de hemp.

Una de las cosas que me encanta tener siempre en casa es pico de gallo o como le dicen aquí en Honduras chimol!

Lo puedes usar como salsa, como aderezo, la verdad en casa se lo ponemos a todo! Es deli y una forma buenísima de agregar verduras a tus alimentos.

Además es facilísimo de preparar: Picas jitomate, cebolla, cilantro, pimiento o chile dulce, y como a mi me gusta con un toque picoso le pongo jalapeño o chile serrano. Mezclas todo en un bowl con limón y sazonas con sal y pimienta.

Cuéntame que tipo de salsa no puede faltar en tu casa?? Los leo

Tuesday dinner was a success!! Got two thumbs up from our boys 👍👍. Spiced up boring chicken, broccoli and cauliflower with a delicious Alfredo sauce 🤤🤤. A perfect balance of all food groups 😉. .

Had to showcase a little more of that green luobo radish from my garden! Woo pretty. I have others that are not quite as big. This one was such a nice size! Whipped up some cauli rice with the radish greens, ginger, leeks and then paired that with oven roasted broccoli and some @sizzlefishfit salmon. Never can go wrong with a yummy salmon bowl!

Staycation weekend is in the books!
.
It's been fun acting as #tourists in our sorta-new home town (can't believe it's been almost a year!), with everyone who comes to visit us.  This time around, we hiked Mount Tabor for the first time, and tried @friedegglove !
.
And we of course had to show off some of our favorite places, including our favorite #comfortfood spot, donut places, #foodtrucks, #breweries, and more.
.
Getting back into the swing of things now, especially with #mealplanning.  After several days of eating and drinking almost all day, with just two of those meals containing anything with fiber or the color green, this week is going to concentrate on getting those veggies in so we can feel better the rest of the week. .
Not because of guilt, but because I'd rather not feel #brainfog or #fatigue which is what usually happens when I have too much of certain foods over a long period of time.  I have zero regrets about any of my food or drink choices this weekend, because honestly, it's pointless to carry that around about experiences we enjoy.
