Happy Friday! 🤩 I made this Spinach, Tomato 🍅& Feta two egg 🍳 omelette with fresh dill for brunch today along with half an avocado 🥑 and lemony arugula salad with toasted pumpkin seeds!
It was absolutely delicious and it totally hit the spot. By the way this combo could be made in advance and re-heats very well on the go if you don’t have time to whip it up in the AM (just like egg muffins). To make the omelette beat two eggs 🍳 with a splash of milk in a bowl. Melt a little butter in a GOOD oven safe non-stick pan on the stove top. Add chopped tomatoes 🍅 and let cook for 30 seconds. Add a handful of spinach and stir the veggies in the pan until the spinach wilts. Spread veggies evenly around the pan. Make sure heat is set to medium then add the eggs over the veggies, crumble feta on top and sprinkle with fresh chopped dill. Let the eggs sit for 2-3 minutes until eggs are mostly set then transfer to an oven set to broil and finish cooking the top about 2-3 minutes. Makes a fail proof omelette every single time!
