Had to have a retake on this miso eggplant because it’s just so good. 🍆 So hopefully you guys don’t mind the little repeat. This was my dinner yesterday. Includes tempeh, the miso eggplant, @lotusfoods forbidden rice noodles, kimchi from @nasoya, avocado, bok choy and some nori flakes. Personally, my fav meal of the week but I always have a bias to miso eggplant. 👏🏽

Miso Glazed Eggplant
1 medium eggplant, cap removed and cut directly in half lengthwise
2 tbsp soy sauce
1 tsp miso paste
1 tbsp rice wine vinegar
1 1/2 tbsp maple syrup 
1 tsp garlic chili sauce or (1 tsp mustard, 1 tsp hot sauce and 1/2 tsp garlic powder) 🥣

Set oven to 375F. Fill a medium bowl or dish with salted water and submerge both eggplant pieces under water for about 10 minutes. Remove eggplant and score it as desired (I did a cross hatch pattern). Whisk together remaining ingredients until smooth. Brush the surface of the eggplant with the sauce to fully coat the scored side of the eggplant. Take eggplant and place in the oven for 8 minutes. Pull eggplant out and baste again with the miso sauce. Place back in the oven for another 6-8 minutes, baste and cook again for another 4-5 minutes or until middle of eggplant is soft. Remove eggplant from oven, and brush again with remaining sauce. Carefully transfer eggplant to a serving plate and enjoy as desired. You can scoop out the inside with a spoon if you are not a fan of eggplant skin. 🤗

Aubergine and tomato salad: recipe from #arabesquecookbook by #claudiaroden

Continuing to enjoy the colourful tomatoes from @iowtomatoes  This is a delicious Lebanese salad called betinjan raheb. A similar recipe is found in #Ottolenghi cookbook, which also uses smokey burnt aubergines and fresh tomatoes, with added yellow peppers and red onions and flavoured with cumin.

Roden’s recipe suggests roasting the aubergines in the oven (for up to 60mins) but to make things quicker I opted for the Ottolenghi way and burnt them with oventop flames (it took just ten mins.) The aubergines were then peeled, drained in a coriander, chopped, mixed with lemon juice, olive oil, garlic, salt, pepper and parsley, spread on a plate and topped by chopped tomatoes, spring onions and a handful of pomegranate seeds.

Мои любимые запечённые баклажаны на пекарском камне от @baking_stone получились просто обалденные!
Имитация печи с помощью камня делает своё дело!)
И эксперименты только продолжаются, я теперь пекарский камень вообще не достаю из духовки, все выпекаю на нем.

И уже раз в 5 поделюсь рецептом запеченных баклажан, сегодня он с соусом песто!

Ингредиенты:
• Баклажаны 2 шт
• Оливковое масло 4 ст л
• Соль, перец
.
На 1 порцию ориентировочно идёт 1 средний баклажан.
Баклажаны моем, разрезаем вдоль на две части и делаем надрезы до шкурки, не повреждая целостность самого баклажана.
Вымачиваем 15 мин в подсоленной воде, для избавления горечи и сочности.
Присыпаем солью, специями, соусом и взбрызгиваем оливковым маслом.
Выкладываем баклажаны на пергамент и ставим на предварительно разогретый камень в духовку на 220’ мин на 20-30.
Смотрите готовность по легкой румяной корочке!

Соус «Песто»
.
Ингредиенты:
.
• Базилик 50 гр
• Шпинат 50 гр
• Кедровые орешки 60 гр
• Сыр пармезан 60 гр
• Оливковое масло 100 мл
• Сок 1/2 лимона
• Чеснок 1 зуб
• Смесь перцев
• Соль
• Сахар
.
Все ингредиенты помещаем в блендер и взбиваем до однородного состояния.

Консистенцию соуса регулируйте с помощью оливкового масла.
Сахар, соль, смесь перцев добавляйте на свой вкус.

ROASTED AUBERGINE WITH TAHINI
Anyone who knows, knows I love techina. I put it on basically anything, I even prefer it to hummus (!) and with this dish i slather it on. A delicious starter or side for Shabbat or as lunch just coz you know it’s #yum 😜
•
1 aubergine, washed & dried
1 tsp extra virgin olive oil
salt & crushed black pepper, to taste
techina for drizzling
handful pomegranate seeds
black sesame seeds & fresh parsley to garnish
Preheat oven to 180•C/350•F
Cut aubergine lengthways in half and then cut a cross-cross inside the flesh, cut deeply but not all the way through
Massage evoo, salt & pepper on all sides of aubergines 
Roast for around 35-40mins until golden and tender to touch
Drizzle (or slather😜) techina on and sprinkle pomegranate, sesame and parsley
Serve warm or room temp 
Enjoy!

Ο μουσακάς είναι το αγαπημένο μου φαγητό, είναι και η σπεσιαλιτέ μου. Όποτε θέλω να περιποιηθώ ιδιαίτερα κάποιον του φτιάχνω το μουσακά μου! Είναι αγαπημένο και της οικογένειάς μου, μας αρέσει πολύ. Είναι επίσης ένα φαγητό διάσημο σε όλο τον κόσμο. Όλοι οι τουρίστες που έρχονται στην Ελλάδα θέλουν να τον δοκιμάσουν.
Εγώ τον φτιάχνω εδώ και πολλά χρόνια με πατάτα, μελιτζάνα, κολοκύθι, σάλτσα κιμά και πλούσια μπεσαμέλ. Έχω καταφέρει να βρω τον τρόπο να τον φτιάχνω ελαφρύ και πολύ νόστιμο. Στην πλούσια μπεσαμέλ με τη γεμάτη γεύση χρησιμοποιώ γάλα εβαπορέ και κεφαλοτύρι που κάνει τη διαφορά!! Στο βίντεο σας δείχνω όλη τη διαδικασία βήμα-βήμα για να τον πετύχετε κι εσείς! Everybody knows moussaka, famous Greek moussaka to be exact :) There is not a tourist who comes to Greece that doesn't want to try moussaka and souvlaki. And with good reason. It's a delicious dish, so typical of the greek summer! With layers of delicious potatoes, aubergines, courgettes, meat sauce and rich bechamel sauce, it's to die for. It's not difficult to make, it just takes some time to prepare everything. If you get organized it's a lot easier. And with good reason. It's a delicious dish, so typical of the greek summer! With layers of delicious potatoes, aubergines, courgettes, meat sauce and rich bechamel sauce, it's to die for. It's not difficult to make, it just takes some time to prepare everything. If you get organized it's a lot easier. One of my top 3 dips : Eggplant caviar 🎈

EGGPLANT CAVIAR RECIPE 
In a food processor mix:
-5 sundried tomatoes + the oil - 200/300g of oven baked (or steamed) eggplants with olive oil and salt - 1 half of a zucchini baked as well -Dried garlic, salt, pepper -Grilled red bell peppers -Basil 🌿 
Enjoy this dip on a toast or with a few raw veggies on the side 🥰 •

L’une des mes sauces / tartinades favorites: Le caviar d’aubergines ❤️ Pour réaliser cette recette il suffit de mixer:
- 5 tomates séchées + leur huile - 200/300g d’aubergines cuites au four avec huile d’olive et sel (ou cuites vapeur comme vous voulez)
- 5 poivrons grillés environ - 1/2 courgette grillé - De l’ail séché, poivre, sel -Basilic 🍀

Étalé sur des tartines c’est un délice ou même avec des crudités 😉
