INDIAN STUFFED SWEET POTATO

Easy. Nutritious. Delicious.  Sound good to anyone?
⠀⠀⠀⠀⠀⠀⠀⠀⠀
I baked up a bunch of sweet potatoes as part of meal prep on the weekend, so this vegan-friendly dinner came together in a matter of minutes, quick iPhone 📸 included!  I served it with a fresh green salad and boy did it ever it the spot.

On my plate:

Baked Japanese sweet potato topped with INDIAN CHICKPEAS (below) + homemade CUCUMBER RAITA (below) + chopped fresh cilantro + @threefarmersfoods crunchy roasted lightly salted chickpeas + a sprinkle of @maldonsalt flakes.

For the INDIAN CHICKPEAS, I simply mixed a can of @earths_choice chickpeas with a pinch of cayenne (optional) & a jar of @goodfoodforgood vegan butter chicken sauce (📸 3; note the tikka masala sauce would work well too) and a bit of water & cooked on medium heat for approximately 10 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
CUCUMBER RAITA:  For this, I mixed together 1 cup plain unsweetened yogurt (Greek or dairy-free) + 1/2 large English cucumber, grated and most of liquid squeezed out + 1/4 cup finely diced onion + 1/4 cup chopped fresh cilantro + 1/2 tsp ground coriander + 1/2 tsp ground cumin + squeeze of lime + salt to taste.

Some days I seriously wish I could be a cat? Anyone else? 
These two are spoiled rotten. They are the best of friends and when they aren't running around the house like nuts. You can normally find them snuggled together under a blanket (yes, they have their own blankets - that they stole from us). They are the best addition to our family and we love them and their loving personalities so much. .

落ち着いてお弁当がアップできた…

引越してから二人暮らしになり、
幸い相方も食べる量はわたしと大差なく、
ふたご弁当でなんとかなっています。

ただ作る量の勝手がわからず、
作り置きしても全然足りなくて、

Parliamo della PASTA, uno degli alimenti più (ingiustamente!) temuti da chi ha paura di ingrassare... 🍝

Un etto di pasta secca fornisce circa 350 kcal, provenienti principalmente dall’amido (carboidrato complesso che deve essere la nostra principale fonte di energia secondo le raccomandazioni della dieta mediterranea) e per un 10-12% da proteine.  Di per sé quindi NON FA INGRASSARE, anzi! È ottima per saziarsi e avere energia a lungo, ma tutto dipende dalle dosi e dal condimento! Logicamente le calorie di una carbonara sono diverse da quelle della pasta pomodoro e basilico... 😉
•
Rispetto al riso fornisce praticamente le stesse calorie ma la pasta ha un indice glicemico più basso (alza più lentamente la glicemia e sazia più a lungo) e contiene più proteine tra cui il glutine (quindi per chi è celiaco la pasta non va bene ma il riso si).
•
Gli spaghetti sono il formato di pasta con il più basso indice glicemico e la cottura “al dente” lo abbassa ulteriormente!
