Steak & Potato Tacos, Hand Made Corn Tortilla, Chili Salsa •½#Flap Meat •1 Russet Potato •1-2 oz. Dubliner Cheese
•2 cups masa flour
•2 cups water,*Tortillas •2-3 Tablespoons Unsalted Butter •1 teaspoon salt,*Tortillas •2 leaves of iceberg lettuce •1-2 Tablespoons cotija cheese,garnish
•¼ teaspoon smoked paprika •¼ teaspoon cumin
•¼ teaspoon garlic powder •⅛ or less teaspoon Cayenne pepper •⅛ teaspoon onion powder
•⅛ teaspoon chili powder
•⅛ teaspoon dried oregano • 1 teaspoon salt
•3 California chiles, de seeded •3-4 chile de arbol, de seeded
•3-4 garlic cloves
• 1 Tablespoon tomato paste •1-2 cups water,*salsa*
• juice of 1 lime
•1 teaspoon distilled white vinegar •½ teaspoon salt,*salsa
•¼ avocado , diced garnish •¼ tomato, diced garnish
•avocado oil for cooking
•10 chives, minced
For the corn tortilla, combine the masa with 2 cups water,1 teaspoon salt, and 2-3 Tablespoons of melted butter. Mix and let the flour absorb the water for about 5 minutes. To roll them out use thin layers of plastic. I use a 1 gallon plastic zip lock bag. Place a ball of masa dough in between the plastic and roll out the dough to about 1/16 of an inch. Carefully roll back the plastic so the tortilla doesn't stick. Cook on a flat pan for about 1-2 minutes on each side. Heat should be set on medium high.
Dice the potato up. Wash in water to get the starch off. Dry the potatoes as well as possible. Saute the potatoes in avocado oil on high heat. Toss them every 30 seconds. Cook them until they are golden brown. Sprinkle a bit of salt.Set a side.
For the meat, season with salt, smoked paprika, cumin, chili powder, garlic powder, onion powder, oregano, and cayenne pepper. Do this to both sides. Place avocado oil in a pan. Cook the meat on high heat for the first minute. Then turn the heat to medium for another 2 minutes. Flip the meat over and cook for 2 more minutes. Turn the heat off and let the meat rest for 10 minutes. Cooking times all depend on thickness of the meat. Cut the meat against the grain.
For the salsa, place the chilis in a pot with water, garlic, tomato paste, vinegar, salt, and lime juice. Boil for 3 to 5 minutes and then blend. Set - 5 hours ago
