I needed a last minute addition to my canapé spread for guest arrival and dug into my secret stash of chocolate truffles. For plating, I added a raspberry reduction (leftover from another dessert), raspberry half and mint leaf.
I highly recommend always keeping gourmet chocolates in the pantry and vanilla bean ice cream in the freezer - they are highly versatile and great for last minute desserts or for guests (and crew) who suddenly develop a sweet tooth. I also recommend a supply of Ben & Jerry’s but that’s strictly for the chef and not to be shared 😉 - 3 minutes ago
