195 g flour
1/8 teaspoon salt
113 g butter (room temp.) 50 g sugar
300 mL of milk
1 vanilla sugar
3 egg yolks
50 g sugar
2 tablespoons flour
2 tablespoons corn-starch
3 cups (720 ml) fruit
Sweet Pastry Crust: In a bowl, whisk the flour with the salt. Place the butter in a bowl and beat until softened. Add sugar and beat until light and fluffy. Add the beaten egg. Add the flour, salt and mix just until it forms a ball. Flatten the pastry and cover with plastic wrap, refrigerate for 15-30 minutes. Lightly butter and flour an 22 cm tart pan with a removable bottom. Roll out the dough and place on top of the pan. Remove the excess dough from the edges of the pan. Cover with plastic wrap and place in the freezer for about 15 minutes. Prick the pastry with a fork, place parchment paper on top of the crust. Fill the crust evenly with dried beans/uncooked rice. Bake the pastry at 200°C for 5 min, reduce the temp to 175°C and bake for 15 min until the crust becomes golden brown. Let the pastry cool and remove the parchment paper with the beans/rice.
Pastry Cream: Heat up the milk and vanilla sugar in a pan. In a bowl mix the flour with the corn-starch and add the sugar and egg yolks. Mix it together until you get a smooth paste. Remove the pan with the milk from the heat and add the flour mixture, mix constantly. Cook the mixture and whisk constantly until it thickens (like when you make pudding). Transfer the mixture in a bowl, cover with plastic wrap and let it cool to room temperature.
Spread a thin layer of apricot glaze (120g of jam melted over low heat with 1 tbsp. of water) over the bottom and sides of the baked crust so it doesn’t get soggy. Let the glaze dry (20 minutes). Then spread the cream onto the crust and place fruit on top of it.
