Introducing my absolute FAVOURITE lunch at the moment.
Sourdough Bread topped with Garlicky Spinach & Mushrooms, Boiled Egg and a Tangy Hollandaise.
Ingredients ( for two)
2 slices of Sourdough
2 Egg's, boiled to your liking
3 Handfuls of Spinach
20g Button Mushrooms, Halved
4 Garlic Cloves, finely chopped
Salt and Pepper to taste
1 Tablespoon of Olive Oil
(For the Hollandaise)
150g Salted Butter
Juice of Half a Lemon
1 Tablespoon of Apple Cider Vinegar
2 Egg Yolks
1) Add the butter into a bowl, and melt in the microwave. Allow to stand for 1 minute until slightly cooled. In a separate large bowl add your Egg Yolks, Apple Cider Vinegar, Lemon Juice and start to gently whisk together. Using a whisk, slowly drizzle the Butter in, continuously whisking as you go. Whisk until thickened and aside. Season with Salt and Pepper.
2) In a small saucepot, fill with boiling water and 1 Tablespoon of Salt and 1 Teaspoon of Bicarbonate of Soda, and leave to boil. Add the Egg's, and cook for 4-6 minutes. Once boiled, leave to cool, and peel off the shell.
3) In a frying pan, add 1 Tablespoon of Olive Oil, and add your Mushroom Halves. Cook for three minutes. Add the Garlic and Spinach and cook until the spinach has wilted. Season to taste.
4) Toast your Sourdough in a toaster, and butter one side. To plate, add the Sourdough first, topped with the Garlicky Spinach & Mushrooms, Boiled Egg (Sliced in half) and a generous Drizzle of Hollandaise.
