Literally my favourite soup. Simple, no soy, no veggie meats, no gluten just vegetables and lentils. Everyone I’ve met who doesn’t even like soup or vegan food, loves this soup! Give it a try! Way too much snacking, but I did better than I was doing last week. I’m committing to making today’s Oreos the last! Finally finished watching The Game Changers this evening and it has me all motivated.

Layer it. Chili beans at the bottom, sour cream in the middle and fresh tomatoes, onions and arugula on top 🌱 If I had guacamole I would put it before the sour cream 😏

Eat with chips or with wraps 💯 I did the latter 😁 (swipe left) One of these days I'll make a vid of my homemade rustic wraps, okay? 😊

By the way, I used sitaw beans for this ❤ I've tried using monggo (mung beans) as well which turned out amazing too! 😍

Naši tostevi su stvarno nešto posebno, to znaju svi koji su ih probali 💚 a pogotovo ovaj hit 🤩 Tost s namazom od bademovog sira, gljiva, baby špinata i karote 🤩 
Kad smo krenuli s radom bio je samo avokado tost al sad smo već dosta toga uvrstili u našu kolekciju superfood tosteva. Zašto ih stavljamo u superfood kategoriju pročitajte:

Plant-based chocolate banana bread with crunchy hazelnut ganache 💕

Ingredients 
Wet
220g (about 2 large) ripe bananas
150ml soy/almond milk 
2 tsp lemon juice/ vinegar 
70g neutral oil (I use grape seed)
160g unrefined brown sugar 
1 tsp vanilla bean paste 
1 tbsp instant espresso dissolved in 1 tbsp water 
Dry
210g spelt flour, sifted 
1 tsp baking soda
40g raw cacao powder
1/2 tsp sea salt
Optional add-ins: 50g | 1/3 cup non-dairy chocolate chips

Preheat the oven to 175C degrees.
Grease and line a 22x10 cm loaf pan. 
In a small bowl, combine soy/almond milk and lemon juice and set aside to curdle for 5 minutes. 
In a medium bowl, sift together the dry ingredients. Fold in the chocolate chips.
Blend the bananas in a food processor until completely smooth. Add sugar, buttermilk, vanilla, oil , espresso and stir to combine. 
Pour the wet mixture over the dry and whisk until just combined. 
Pour the batter into the prepared loaf pan.
Bake for 40-45 minutes. 
Let cool down completely before slicing. 
Crunchy chocolate  hazelnut ganache 
150g full fat coconut milk 
300g chopped chocolate 
4 tbsp toasted hazelnut, chopped 
2 tbsp rose petals @suncorefoods to decorate 
Heat the coconut milk over medium high until the simmer point. Pour over the chocolate chips and set aside for 5 minutes, then gently stir and let cool down completely. Fold in the hazelnuts. Pour over the cake and place in the fridge to set for at least 2 hours. .

Dinner tonight was super late, so i wanted to keep it nice and light -roasted asparagus and a big salad are one of my favorite combos. I love adding chick peas and hemp seeds to my salads to make them more filling and amp up the nutrients! Stretching out my ingredients as best as possible. Found 3 small new potatoes in my fridge, and had a little halloumi left over from the weekend. So I improvised and made my version of potato latkes. Had them for breakfast but can these be had for lunch and dinner. Perfect with a side of leafy greens...#latkes ⁣⁣
⁣
𝐓𝐨 𝐦𝐚𝐤𝐞 (yields 4 small latkes) ⁣⁣
𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴 ⁣⁣
3 new potatoes (or 2 small sweet potatoes/ 1 regular potato) ⁣⁣
1/4 of a small onion (diced) ⁣⁣
A few slices of halloumi ⁣⁣
Sprinkle of turmeric⁣⁣
1/4 chopped red birds eye chilli (optional) ⁣⁣
Olive oil for cooking ⁣⁣
Handful of coriander ⁣⁣
Salt to taste ⁣⁣
⁣⁣
𝘔𝘦𝘵𝘩𝘰𝘥 ⁣⁣
1. Pre-heat the oven to 180C/ 250F. Line or grease a baking tray ⁣⁣
2. Grate the potatoes⁣⁣
3. In a pan, heat a tbsp or so of olive oil, throw in the onions with turmeric and chilli and sauté for a couple minutes⁣⁣
4. Add the potato and salt, continue cooking until the potatoes have cooked through. Mine took around 10 minutes⁣⁣
5. Throw in the coriander bear the end ⁣⁣
6. Scoop a tablespoon of potato on the baking tray. Press down slightly and repeat⁣⁣
7. Slice the halloumi and give it a gentle browning in the already used  pan to cook the potatoes. Top on the potatoes⁣⁣
8. Pop into the oven to brown. I did around 8 minutes. ⁣⁣

Stretching out my ingredients as best as possible. Found 3 small new potatoes in my fridge, and had a little halloumi left over from the weekend. So I improvised and made my version of potato latkes. Had them for breakfast but can these be had for lunch and dinner. Perfect with a side of leafy greens...#latkes ⁣⁣ ⁣ 𝐓𝐨 𝐦𝐚𝐤𝐞 (yields 4 small latkes) ⁣⁣ 𝘐𝘯𝘨𝘳𝘦𝘥𝘪𝘦𝘯𝘵𝘴 ⁣⁣ 3 new potatoes (or 2 small sweet potatoes/ 1 regular potato) ⁣⁣ 1/4 of a small onion (diced) ⁣⁣ A few slices of halloumi ⁣⁣ Sprinkle of turmeric⁣⁣ 1/4 chopped red birds eye chilli (optional) ⁣⁣ Olive oil for cooking ⁣⁣ Handful of coriander ⁣⁣ Salt to taste ⁣⁣ ⁣⁣ 𝘔𝘦𝘵𝘩𝘰𝘥 ⁣⁣ 1. Pre-heat the oven to 180C/ 250F. Line or grease a baking tray ⁣⁣ 2. Grate the potatoes⁣⁣ 3. In a pan, heat a tbsp or so of olive oil, throw in the onions with turmeric and chilli and sauté for a couple minutes⁣⁣ 4. Add the potato and salt, continue cooking until the potatoes have cooked through. Mine took around 10 minutes⁣⁣ 5. Throw in the coriander bear the end ⁣⁣ 6. Scoop a tablespoon of potato on the baking tray. Press down slightly and repeat⁣⁣ 7. Slice the halloumi and give it a gentle browning in the already used pan to cook the potatoes. Top on the potatoes⁣⁣ 8. Pop into the oven to brown.
