Every now and then we get a health and fitness buff gracing our home. After all, this is a haven for many Ultra runners, triathletes, Ironman participants, mountain bikers and trekkers. This particular guest waxed eloquently on the many benefits of training at 7000 feet and how the altitude and the hill slopes would greatly enhance his aerobic capacity and muscle strength. We nodded in agreement. Little did he know that we were home to one of the toughest endurance races in these parts, Khanabadosh 100 - the Nomads Trail and world class athletes have been a part of our guest list. 
When I asked him about breakfast, he said 'anything healthy' with a shrug, without expecting much. The look on his face was priceless when we served him our Mountain Fuel Jar, powerpacked with rolled oats, quinoa, peanut butter, blueberries, eucalyptus honey, sunflower and chia seeds, amaranth and ashwagandha soaked in almond milk. He looked at the kitchen crew in disbelief as the chef expounded on the benefits and added for good measure that training at this altitude would only give results with the right nutrition!
He just smiled and went out for his morning workout in the hills. While we do give a patient hearing to all our guests, we let our food and service do the talking. Its been a week now and we have just received his confirmation as a competitor for the 2020 edition of Khanabadosh 100, The Nomads Trail! Quick Chicken Recipe
This is one of the best chicken recipes! It comes together so quickly and it really is just so easy to make. No marinating, no lengthy bake time, no waiting for a grill to preheat, just pan sear it in a skillet and finish it off that rich and creamy garlic herb sauce.
~
4 (6 oz) boneless skinless chicken breasts,
Salt and freshly ground black pepper
1 1/2 Tbsp olive oil
1 Tbsp butter
1 Tbsp minced fresh garlic (3 cloves)
2 tsp all-purpose flour
1 cup milk (anything but skim)
4 oz. cream cheese, diced into small cubes
1 tsp minced fresh thyme*
1 tsp minced fresh rosemary*
1 Tbsp minced fresh parsley (optional)

Monday’s are usually my days to clean the house because we’re home. Each day I have a little checklist of things to get done, but Monday is catch up day. Today I did a few loads of laundry and I wanted to share a CLEAN laundry boost for you that’s so simple and not filled with harmful ingredients. ⠀

🧺 DIY LAUNDRY BOOST⠀
To make:⠀
Combine in a 16 oz jar⠀
∘ equal parts epsom salt and baking soda ⠀
∘ 20 drops essential oil of choice, I used lemon ⠀
⠀
To use:⠀
∘ add up to 1/4 cup into your washer before adding clothes ⠀
∘ for tough stains or dingy whites, pre-soak with 1/4 cup in warm water for about 20 minutes or overnight prior to washing⠀

Surer excited to start training for my first NPC competition in the wellness division of @musclecontest !!!! This division is brining a whole new look and it is placed between bikini and figure. My Main focus is to keep building my shoulders as well as my lower body (quads , hamstrings and flutes) as this division has a way more dominant lower body than the bikini division that I have competed in the past.

✨Prepping for the week!✨
I started to feel like crap and realized.... I was eating like crap!
DUHHHHH AMI!!! 🤦🏼‍♀️
So I cleaned it up, and I’m keeping it simple! I haven’t cut anything out of my diet 100%, but I am keeping certain things to a minimum. I can tell a huge difference! My face is clearing up, my bloating has reduced, my gut seems to be healing, and I feel less sluggish!!
🔹Majority of my diet: (90-95%)
▫️Fresh vegetables
▫️Fresh fruits
▫️Lean meats
▫️Eggs
▫️Water! Water! Water!
THAT’S IT! Keeping it simple ☑️
🔹Eating minimal: (5-10%)
🔻Dairy
🔻Processed food
🔻Fast food
🔻Canned or prepackaged food
🔻Refined, high processed carbs
🔻Sugar and/or sugar substitutes
🔻Caffeine, carbonated drinks, and alcohol

Not sure if this will always be an attainable or realistic diet for me, but right now — this is working for me and I’m feeling better! 🙌🏼🙌🏼🙌🏼

Tonight we had a delicious Vietnamese salad  bowl !  Zucchini noodles, cucumber 🥒 shredded carrots 🥕 of all colors (yellow, purple, orange) we want to eat the rainbow 🌈 organic sprouts , and avocado 🥑. For dressing we used lemon, chili  peppers🌶 and apple cider vinegar. For side  we made grilled sweet peas, and bok choy 🥬 .

Ingredients:
4 large chicken breasts
1 tbsp lemon zest
salt & pepper
12 asparagus stalks, trimmed
3 slices mozzarella cheese
1 tsp garlic powder
1 tsp paprika
1 tbsp olive oil

Directions:
Preheat oven to 425 degrees F.
Cut the chicken breast in half, length-wise. do not cut all the way though.
You need to create a pocket into each chicken breast.
Season the inside of the chicken breast w/ lemon zest, salt & pepper.
Place chicken on work surface & lay the mozzarella cheese & 3 asparagus inside of each chicken breast & fold over, enclosing the filling.
In a small bowl mix together salt, pepper garlic powder & paprika. Then season the outside of the chicken breast w/ this spice mixture.
Heat a large & oven safe skillet over medium-high heat. Add the olive oil.
Sear the chicken for 3 to 5 minutes each side & until the chicken is golden brown on top.
Place the chicken in the oven.
Bake for 20 minutes. Make sure the chicken reaches the internal temperature of 165 degrees.

Cut the chicken breast in half, length-wise. do not cut all the way though. You need to create a pocket into each chicken breast. Season the inside of the chicken breast w/ lemon zest, salt & pepper. Place chicken on work surface & lay the mozzarella cheese & 3 asparagus inside of each chicken breast & fold over, enclosing the filling. In a small bowl mix together salt, pepper garlic powder & paprika. Then season the outside of the chicken breast w/ this spice mixture. Heat a large & oven safe skillet over medium-high heat. Add the olive oil. Sear the chicken for 3 to 5 minutes each side & until the chicken is golden brown on top. Place the chicken in the oven. Bake for 20 minutes. Super simple but filled with flavor !! When I steam my kale I like to add a lil pink Himalayan salt too! I just roasted the veggies in the oven for about 10 minutes and shook the pan up and baked for another 5 minutes. In season veggies really do hit different... and that’s the truth. I thought I would give you guys some ideas for snacks! I literally have to live off of quick food. So, I’ve learned how to make easy food healthy! ⁣

These are just some of the snacks I implement... and most of the time these snacks are combined! For example, I’ll have an RX bar with a fruit pouch if I’m about to workout. If I need a mid day snack, I’ll go for almond butter with banana on a rice cake and then maybe some yogurt too! Just make these snacks as big or little as needed! ⁣
