Due to sickness and holidays and traveling, I haven’t been cooking as much as I’d like. But I finally had the time and energy to jump back into the kitchen tonight.
I made this Chicken Piccata + artichokes that I adapted from @williamssonoma ’s blog. I’ve always loved a piccata, but this one was exceptional, especially when paired with my EXTRA CRISPY chicken thighs!
I know it sounds silly, but it felt so good to make dinner tonight. I put in my (new Valentine’s present) AirPods and danced and cooked and when all was said and done I felt like a new woman.
There is something that lights up inside me when I cook and it’s amplified when I’m cooking for people I love. It’s like I tap into a separate energy source. I find myself grinning and singing to myself. I know not everyone feels this way about cooking, and that’s okay. But I do think you should find your thing that makes you feel this way, and I think you should do it everyday.
