I’m trying to get my diet sorted because frankly it’s absolute shit. I’ve been listening to the @plant_proof podcast and in particular the Dr B interviews. My mind has been absolutely blown so now I’m challenging myself to eat 40 different fruit and veg a week. Here’s 35 (thanks @spudshed ) plus I’ve got a few other things in the fridge. My priority is going to be eating a diverse range of fruits and veg and not worrying about my weight

Carrot & Coriander Dhal RECIPE with Sesame Eggplant:

One of my all time faves, but can't take all the credit for this recipe, the dhal recipe has been adapted from the Healthy Food Guide recipe, it's soooo good honestly everyone loves it! This makes the perfect nourishing, tummy warming dish for when you need a hug from the inside. -
LENTIL INGREDIENTS:
-
1T coconut oil
2t black mustard seeds
2t cumin seeds
750g grated carrot
1L veggie stock
1C split red lentils
2T crunchy or smooth peanut butter
1T curry powder
salt & pepper to toaste
fresh coriander to serve
coconut yoghurt to garnish

METHOD:
-
Heat oil, add seeds, and stir until they begin to pop. Add carrot. Let it sweat for 10 minutes. Add stock and lentils and let simmer for 30 minutes or until lentils are soft. -
Stir in peanut butter, curry powder, salt & pepper, and simmer until it has a nice thick consistency. Stir in coriander. Turn off heat and serve with a dollop of coconut yoghurt and extra coriander to garnish, and the sesame eggplant.

1 whole eggplant
1T miso paste
1T raw honey
1T tamari
1T ACV
1T sesame oil

METHOD:

Preheat oven to 180 degrees celsius. Cut up eggplant into cubes. Mix rest of the ingredients in a large bowl so nicely combined. Add eggplant cubes to the mix and toss to combine. Pour onto a baking tray and bake in oven for 30-40 minutes until eggplant soft and the sauce has a nice caramel stickiness.

Serve with your carrot and lentil dhal, fresh spinach & coriander on the side. I make @jun_thedrinkofthegods for many reasons. For equally our body our mind and our soul and spirit.  And because it focuses on so many pieces of me I allow it I to many times of my daily wellness. I can use it first thing I can take it to lunch I can unwind in the evening. Wellness to wellbeing is a complete journey that is a huge part of our life. It’s not difficult to be well once you’ve set the rituals to be well. From there moving to wellbeing. To peace and clarity in our being becomes a flow of ease. When working with people from a healing perspective. I recommend about 3 bottles a week. Sounds huge. But when we are working to both increase probiotics and allow the medicinal properties of herbs to kick in we want ole ty of goodness. Usually 3 x 100ml shots a day or a 250 glass in the morning and a 100ml shot at night. My face when I drink my greens😁✊ Y'all have heard me talk about it before..
The condition my gut used to be in, after my accident.

My doc gave me everything under the sun to try to fix it.
She said, "it's like shooting you and not having blood come out." [Soo graphic, I know 😂🤷] The point is, taking care of my gut and making sure I'm doing what I'm able to keep things in check and.. ehhheeem, running smoothly is a high priority for me! I never wanna feel that way again.

Honestly, it should be a priority for all of us! As a huge part of our immune system functions from the gut!
