No celebration is complete without my CRACK SALSA. I am officially ready for our Memorial Day 🇺🇸 cookout in the backyard.  A little different this year. It’s just my little clan of 4 but we have each other, lawn games, filet mignon for the grill, and TONS of crack salsa! So life is good! 👌🏽 I’ve lost count of how many people I’ve gotten hooked on this shit. You cannot believe how fk’n good this stuff is until you try it. How To Make Guilt-Free Chocolate Covered Strawberries:
.
WHATCHU NEED:
• 🍓Strawberries of course! (24)
• 🍫One (9oz) bag of Lily’s Dark Chocolate Baking Chips*
.
WHATCHU DO:
💧1. Wash and dry your strawberries.
🍽 2. Cover several plates or one large platter with parchment paper.
🍫 3. Pour chocolate chips in a small/medium microwaveable bowl.
♨️ 4. Nuke chocolate chips for 30 seconds and then mix well with spoon. Repeat this until fully melted. (It only takes me 2 times).
🍓 5. Hold strawberry by the leaves and swirl in chocolate. Set carefully on parchment paper. Repeat until all strawberries are done.
❄️ 7. Put in Fridge until set, about 5-10 minutes.

One of my biggest regrets (and I don't have many) is not taking more pictures with my girls when they were little. I was morbidly obese and didn't want my picture taken. I sorely regret it. I wish so badly I would've known then what I know now. I look back on the few pictures I do have of myself at 262 pounds and I don't see a fat woman like I used to, I see a beautiful woman. It took me losing 120 pounds to truly realize that I've been beautiful all along. If you're not happy with the way you look in pictures, just remember the people in your life don't care how much you weigh and they want tangible memories to keep and to cherish. Don't make the same mistake that I did. You'll regret it someday. So go ahead, get in those pictures! 📸

It’s been a busy ass week (and month) and I had no time to meal prep for lunches this week, so I opted for this quick and easy lunch all week... BUFFALO HUMMUS WRAPS 🙌🏽 Half the week I omitted the lunch meat and added thinly sliced bell peppers and onions to the wrap (because I really don’t like lunch meat and it’s not very good for you). However, in a pinch, it’ll do. Sometimes good enough has to be good enough, ya know?

My fav way to eat these buffalo wraps is to use leftover cooked chicken breast. I shred it and mix it up with the buffalo hummus and then add my other ingredients. Oh it’s super yum I tell you 👌🏽, but again this past week there was no time for perfection. Also, ideally if I was using lunch meat like I did this week, I would use chicken breast lunch meat but my forgetful ass forgot to put it on the list and I already had the turkey at home so that’s what I used. Again, sometimes you just gotta go with the flow. 💫

INGREDIENTS:
• Low carb wraps from Aldi (you can use whatever wraps you’d like!)
• Buffalo Hummus from Aldi (again, you can use whatever flavor)
• Bagged shredded cabbage from Aldi (You can use lettuce or whatever floats your boat. I like the crunch of the cabbage)
• Turkey lunch meat (I prefer cooked chicken or chicken breast lunch meat, you can also omit meat altogether for vegetarian option)
.
I was able to eat lunch all week for under $16. That’s only $2.28 A DAY!! I’ll take it.

It’s a quick, easy, and cheap solution if you have a super busy week and have no time to cook or prep for the week!
