Don't chicken out of making your favorite dinners healthier 🐔

Coated in its traditional crusty goodness and topped with melty mozzarella, @chefbillyparisi's Chicken Parm is baked and served over polenta for a lighter spin on this Italian dish. .
Baked Chicken Parmesan with Polenta
Ingredients (For the Chicken):
1 cup all-purpose flour
3 egg whites
1 cup breadcrumbs
1 Tbsp of garlic powder
1 Tbsp. of dry basil
2 tsp.of salt
½ tsp. ground pepper
4-6 ounces boneless skinless thinly sliced chicken breasts
1 cup Heinen’s marinara sauce
1 cup shredded park skim milk mozzarella cheese
½ cup grated Parmesan cheese
Chopped fresh basil for garnish
.
Ingredients (For the Polenta):
4 ½ cups vegetable stock
1 ½ cups cornmeal
¼ cup grated Parmesan cheese
Salt and pepper to taste
.
1. Preheat the oven to 400°F.
2. Add the flour to a medium-size bowl and set aside.
3. Next, add the egg whites to a separate medium-size bowl and set aside.
4. Add the breadcrumbs, garlic powder, basil, salt and pepper to a separate medium-size bowl and whisk until combined.
5. Dredge the chicken breasts in flour one by one, then dip them on both sides in the egg whitewash followed by completely coating them in the breadcrumbs.
6. Set the chicken breasts on a cookie sheet tray lined with parchment paper and bake at 400°F for 15 minutes or until lightly golden brown.
7. Next, evenly add the marinara sauce to the top of each cooked chicken breast and evenly sprinkle on the mozzarella and parmesan cheese.
8. Place back in the oven at 400°F for 5-7 minutes or until the cheese is melted and lightly browned.
9. Bring the vegetable stock to a boil in a medium-size saucepot over high heat. Season with salt and pepper. 
10. Pour the cornmeal into the boiling stock while continually whisking so that it doesn’t clump.
11. Turn the heat down to low and continually whisk for 8-10 minutes until the polenta is thick and cooked. 
12. Finish by whisking in parmesan cheese until combined and serve with the chicken parmesan.

It’s hard to take care of your own health and body in the world of fast food and prestigious game of “Did you.. oh, you simply have to... the best restaurant in town !! “ and the list goes on. I’m the first one that’s raising her hand up. You get caught up with trends, ‘wannabe’ and laziness. And then one day - trust me THAT day always comes - you realize something in your body doesn’t work properly so it’s upon you ( and/or specialists ) to figure out how to heal your bad food choices with good old fashioned homemade food. .

It’s not easy to make bread, starters, your own pasta, every lunch or dinner, your own desserts ( wash tons of dishes because let’s face it - if you do cook 3 times a day, or all of it in one shot—there will be much more dishes than your dishwasher can bare ). .
.
But it’s a CHOICE. .
.
You crave an ice cream - make it. 
You want pizza - no problem - make it.
You want hot chocolate - make it. 
Tomato sauce for pasta - make it.
Make it ALL FROM SCRATCH. 
If you don’t want to - how real is your craving ? And how much is actually consequence of missing nutrients, water or something else a well balanced breakfast-lunch-or dinner could’ve provide?! 🤔 I do always ask myself that. I don’t always succeed - especially in PMS and ice cream cravings lately. But - I try. Daily. And things in my body ( and outside ) started to change little by little for the better. 
You can do it too. Start with something small and after that don’t stop. .

Easy to make, no oil needed 😱 and you definitely can use more different spices like paprika (normal or smoked), curry, black pepper, coriander or even provance herb mix 😍 You could skip the boiling part but that would make them crispier 🍟

RECIPE 
For potato wedges:
600g regular yellow potatoes
1 tsp chili pepper
0.25 tsp sea salt
.
For the avocado dip:
1 avocado
2 tsp plant milk
1 tsp lime juice
0.25 tsp sea salt
.
Steps
1. Preheat the oven to 220C/428F
2. Cut the potatoes into wedges and put them into a pot
3. Boil the potatoes for 5 minutes and then drain the water
4. Add the spices into the pot, close the lid and give it a shake (it doesn’t matter if some wedges break)
5. Spread the wedges on an oven tray lined with parchment paper
6. Bake the potatoes in the oven for about 20-30 minutes 
7. In meanwhile prepare the avocado dip by combining all these ingredients in a bowl
8. Mash and wish until it’s creamy
9. When the potatoes are ready, serve as a side dish or just eat them with the avocado dip!

i’ve just got home and devoured this cozy bowl, that constisted of white rice, @jessiemaysnyder’s real amazing weeknight dhal, perfectly ripe avocado, lots of lemon juice, freshly ground pepper and cilantro🙌🏻✨😋 later on i’m planning to rest along with one of my new books (forever spending all my money on them🤪) and hot cocoa (Jessie has a really great recipe saved on her highlights). happy monday! xx

Easy weeknight dinners are my JAM 💯 this whole thing took about 10 minutes of active cooking, tasted delicious, and gave us 4 meals for only $12. Talk about WINNING! Also totally #paleo and #whole30 friendly on a budget.

The TLDR of how to make this: throw potatoes in oven, chill for 45 mins. Then sauté zukes and sausage for 5 mins, toss dat salad, and devour it all. .

DA GOODS: baked sweet potato (45-60 mins at 420), when there’s 10 minutes left in potatoes, char up the zucchini with olive oil, salt, pepper, and @primalpalate adobo seasoning, and sauté sliced @traderjoeslist spicy Italian chicken sausage. 
Then toss together a green salad with ACV dressing (equal parts apple cider vinegar, olive oil, and Dijon) and maybe some (optional) feta. Top potato with ghee + salt if that floats your boat.

Hot sausage 1 pound
Mild sausage 1 pound
Ground beef 1 pound
Raos pizza sauce 2 jars
pepperoni
Mushrooms
Mozerella cheese

Brown meat and drain add sauce
Put on bottom of large pan
Add mushrooms and just about any other veggie you want
Spread mozerella on top add pepperoni 
Bake at 400 for 25 minutes! 
Cut like lasagne!
