Ingredients 🍱:
12 oz. wide rice noodles or udon noodles
1/3 c. low-sodium soy sauce
3 cloves garlic, minced
Juice of 2 limes, plus wedges for serving
1 tbsp. Sriracha
1 tsp. honey
3 tbsp. toasted sesame oil, divided
1 tbsp. cornstarch
3/4 lb. flank steak, thinly sliced against the grain
1 large head broccoli, cut into florets
8 oz. baby bella mushrooms, sliced

DIRECTIONS:👩‍🍳
In a large pot of salted boiling water, cook noodles according to package directions until al dente. Drain, then rinse with cold water.
In a small bowl, whisk together soy sauce, garlic, lime juice, Sriracha, honey, and 2 tablespoons of sesame oil, then whisk in cornstarch until smooth.
In a large skillet over medium-high heat, heat remaining 1 tablespoon sesame oil. Add steak and sear 3 to 5 minutes per side.
Stir in broccoli, mushrooms, and 2 tablespoons water and cook until tender, about 6 minutes more. Add sauce, simmer 3 minutes, then reduce heat to low and add cooked noodles. Toss until fully coated and warmed through.
Serve with lime wedges.

I am HUNGRY today! I went to meadowhall so while I was there, picked up a boots meal deal. The cous cous salad is only 1.5 syn which I had with a melon and mango pot. ⠀

Quinoa stuffed roasted bell peppers and zucchini 💛 I forgot how much I love stuffed bell peppers! 😋 In the past I've used rice and ground beef for the filling but last night I decided to try quinoa instead of rice and a veggie mix with my ground beef. I topped them with some chilli peppers for a little spice too!
•
INGREDIENTS 🥣
[serving size = 2 peppers]
-----------------------------------------
2 bell peppers, seeded
1/2 cup cooked quinoa
2 tbsp olive oil
1 carrot, peeled and diced 
1/2 small onion diced
1 red chilli pepper (optional)
1 chive, diced
1/4 cup of shredded cheese (of your choice)
Small handful of greenbeans, diced
Seasonings: use your faves! I used crushed red pepper, bbq seasoning, onion powder, garlic powder, and S&P
•
INSTRUCTIONS 📋
-----------------------------------------
1️⃣ Sauté your veggies on medium heat in a pan with 2 tbsp of olive oil until soft.
2️⃣ Season and cook the ground beef. Combine with cooked quinoa and veggies when done.
3️⃣ Stir for an additional 1-2 minutes to fry the quinoa. Remove from heat.
4️⃣ Cut the peppers in half and discard the seeds. Fill the peppers with the filling. 
5️⃣ Place the stuffed peppers into the baking dish and bake at 325°F for 20-25 minutes or until peppers are softened - sprinking cheese on top of peppers 2-3 minutes before peppers have finished cooking.

What’s your favorite flavor of curd, and how do you like to use it?

This week on ZK we are celebrating ORANGES! Yes, the season of good citrus is here! And before I start rolling out three (maybe four) new recipes, I want to chat a bit about curd! I love making homemade curd. Lemon is the obvious choice, but did you know you can also make lime, grapefruit, orange, cranberry, and even rhubarb curd? The flavor options truly are endless. On weekends, I typically meal prep one savory dish and one sweet dish for the week ahead🤗 This week’s sweet dish is CHOCOLATE banana bread!🍌🍫 Which is sooo quick and simple because you can just toss everything in a blender (obviously quite a fan of this method lol🤷🏼‍♀️)⁣

I will note though that since there’s way more bananas than flour, the recipe is a bit more moist and delicate than a traditional bread. But don’t let this deter you! It’s still sooo good on its own, with peanut butter, or greek yogurt💗✨⁣

🌟Chocolate banana bread:⁣
⁣
🌟Dump the following into your blender:⁣
-5 spotty bananas ⁣
-1/2 cup peanut butter ⁣
-1/4 cup melted coconut oil⁣
-1/2 cup cacao powder ⁣
-3 eggs⁣
-1 tsp vanilla extract ⁣
-1/2 cup coconut flour ⁣
-3 tsps baking powder ⁣
-1 tsp cinnamon ⁣
-Thicc pinch of salt ⁣
⁣
🌟What to do next:⁣
-Line a bread pan with parchment paper ⁣
-Pour batter into pan and sprinkle some dark chocolate chips on top ⁣
-Bake on 350° for 50 minutes and enjoy!!
