Chicken and chickpea curry 🌶🌶🌶 Very tasty homemade meal again tonight. This meal is very wholesome which provides plenty of nutrients and very little preparation is needed.
Ingredients 💫 -Mini chicken fillets cut into cubes
-2 cans of chopped tomatoes -1 can of chickpeas
-1 red chilli sliced and diced -1 green chilli sliced and diced
-1 clove of garlic crushed
-Peri peri rub to spice up the chicken pre cooking -1 courgette
-1 tsp of curry powder -1 tsp of cumin powder -1tsp of turmeric powder
-1 tsp of chilli powder - long grain rice
Serve with brown or white rice or quinoa, whatever tickles your fancy. I used long grain rice as it is an excellent accompanhment for any hearty dish like my special curry naturally packed with vitamins and minerals, thus a superb for those seeking a healthy diet.
Long grain rice is free from cholesterol and super low in fat and sugar. It is an excellent source of carbohydrates, will enhance satiety levels, provide with you bundles of energy and help you stay in tip top health.
Also you can add as much spices as you want, this dish wasn't too over powering but if you like it hot add more peri rub on the chicken (I used m&s peri peri rub which is real tasty) and /or another red chilli.

This meal is an excellent choice for batch cooking. I usually make a huge pot and fill a few lunch boxes for the freezer for myself especially when I'm working. This helps me try to maintain my healthy diet through my busy work schedule and lifestyle.
