3 cups Bone broth⠀
3 tbsp. chopped Ginger⠀
3 tbsp. Coconut oil⠀
1 head Broccoli with stem chopped⠀

Half bunch chopped Parsley⠀
2 tbsp Thyme leaves⠀
3 tbsp. Chopped garlic⠀

Golden tofu cakes🤩, a super easy dish that you'll want to save 😉⁣⁣
⁣⁣Happy Monday, friends🤗, hope you had a wonderful weekend. My family loves tofu, it's such a versatile ingredient & can be turned into amazing dishes easily. These tofu cakes will give you a satisfying meal with a crispy✨ layer on the outside & thanks to jicama, you'll get some crunch inside too🙌🏻. Hope you like this simple recipe😋⁣⁣

Recipe (yields 2-3 servings)⁣⁣⁣⁣
Ingredients:⁣⁣⁣⁣
~ 1 pack of firm tofu, drained well⁣⁣⁣⁣
~ 1/4 cup chopped celery (used Chinese celery)⁣⁣⁣⁣
~ 1/4 cup chopped jicama⁣⁣⁣⁣
~ 1 small carrot, chopped⁣⁣⁣⁣
~ 2.5 tablespoons tapioca starch⁣⁣⁣⁣
~ 2 teaspoons salt⁣⁣⁣⁣
~ a pinch of white pepper⁣⁣⁣⁣
~ oil for pan-frying⁣⁣⁣⁣
~ Sweet chili sauce (used maeploy_kitchen brand) with chopped cilantro⁣⁣⁣⁣
⁣⁣⁣⁣
✔️Mash tofu in a bowl, if it's too wet, use a paper towel to absorb moisture. Add celery, jicama, carrot, starch, salt & white pepper to tofu & mix until well combined. Take about 2 tablespoons of mixture & mold it into a patty by passing it between your palms🙌🏻 ⁣⁣⁣⁣
⁣⁣⁣⁣
✔️In a heated non-stick pan, drizzle a thin layer of oil covering the pan, place patty in slowly one by one.⁣
✔️Using low-med heat, pan-fry cakes until golden brown on both sides. It's best to flip when the tofu starts to turn golden brown at the bottom. ⁣
*I place tofu cakes on a parchment paper while working on the rest. Parchment paper helps absorbs some moisture too. ⁣⁣
😋To serve, wrap tofu cakes with your favorite leafy greens & dip in sweet chili sauce with a squeeze of lime juice.⁣⁣

PEANUT & CHOCOLATE BAKED OATS🥜🍫

-60g Jumbo Porridge Oats
-35g Choc & Nut Vegan Protein
-5g Chia Seeds
-40g banana
-5g Maca Powder
-160ml Unsweetened Almond Milk
-30g Natural Almond Milk Yog ➡️Toppings:
-Crisp Coated Chocolate with a Peanut Heart
-Smooth Peanut Butter
-Choc Shot
-Sliced banana ➡️Method:
1.Preheat the oven to 160 Celsius (fan).
2.Mix the ingredients except the oats the together and then add in the oats
3.Mix well
4.Transfer to an ovenproof ramekin or bowl
5.Bake for 20 minutes
6.Top with the chocolates and bake for a further 5 minutes.
7.Allow to cool for a few minutes and top with remaining toppings above

Creamy Chicken Enchilada Soup 🤩By @healthyfitnessmeals Recipe 👇

Ingredients
1 Tbsp Butter or Ghee or avocado oil
1 Medium Onion diced
2 Celery Stalks sliced
1 Medium Carrot thinly sliced
1 Large Red Bell Pepper diced
2-3 Garlic Cloves chopped
1½ Tsp Ground Cumin
1 Tbsp Chili Powder
1 Tsp Dried Oregano
15 oz Diced fire-roasted Tomatoes 1 can
¼ Cup Tomato Paste
4 Cups Low Sodium Chicken Broth
14.5 oz Red Kidney Beans rinsed, 1 can
14.5 oz Black Beans rinsed, 1 can
1 Cup Fresh or Frozen Sweet Corn
2 Cups Shredded Cooked Chicken
1 Cup Mexican Shredded Cheese Blend
Salt and pepper, to your taste

Instructions
Melt butter or ghee (add avocado oil is using) in a large stockpot over medium-high heat.
Add onion, celery, carrots, bell pepper, garlic and cook until softens, about 5-6 minutes.
Stir in seasonings, diced tomatoes, tomato paste, and chicken broth and bring to a boil. Lower the heat and simmer for about 10-15 minutes, or until veggies are very tender.
Remove from heat and using a hand blender, blend the soup until smooth and creamy. Place the soup back over medium heat and add in beans, corn and shredded cooked chicken.
Stir to combine and boil for a couple of minutes, just to heat it all up.
Then pour into bowls and top with your favorite toppings. Enjoy!

In Brazil, doctors use  skin to bandage and treat second- and third-degree burns. According to an investigation by PBS News Hour, the fish skin reportedly cuts down on healing time, reduces the need for pain medication, and helps with scarring, all due to an abundant amount of collagen proteins. Did you go out and have a big meal last night? Feeling like an overstuffed teddy bear? You’re probably thinking, “I ate too much, now I’ve gained fat”.

You know that fat takes time to come off, but you sometimes forget that fat takes time to pack on too. So while you may be *feeling* like you packed on a few, the reality is, it’s not fat. Your belly is holding on to water from eating the delicious foods you ate. And you might still be digesting it all too!

You can sometimes mistake bloating and actual stomach content for fat, and you might feel like a ginormous stuffed turkey, but the good news? It’s all temporary.

If I can be honest here for a second…. Coming to the realization and acceptance, that one meal was not going to make or break my progress, wasn’t easy for me. Those demons raise their voices every so often to this day, but consistency with hopping right back on track with no self punishment cardio, no self punishment starvation, and no self punishment crunch-a-thons, I am now able to go out and enjoy myself, be in the moment, and live my life as it was meant to be lived.

So starting today, it’s time to make a change: No more guilt. No more punishment. Just hop back on track with your normal workouts and your nutrition guidelines and keep going. It really is that simple. It’s time to live life guilt free. 💜.

This #oatsbowl breakfast seems to have hit home with many ...the ones asking for the #RECIPE...so here it is!
🥣🍶
It's easy , its simple and quick too. Just a few additions to your normal oats poridge prep.
🥣🍶
Makes 2 bowls...
- Take 4 tbps of rolles oats or instant - Wash them clean under running water
- add them to a sauce pan and add 1.5 cups of water
- add a pinch if sea salt or normal table salt
- set it to cook on medium flame occasionally stiring
- Add a heaped spoon of #rawcacaopowder and stir in well
- Now add a spoon full of #instantcoffee of your choice (qty can vary basis your taste)
- mix well as it all cooks together - Add a cup of milk of your choice ..dairy or nut milk...#almondmilk will be awesome - add a bit if #vanilla if available - cook all together till oats turn into a creamy texture.

Pour into #breakfastbowls and set aside ot cool...unless you want to have it warm.

Garnish with walnuts almonds coconut chips and fresh or frozen bananas or berries 
Since I used frozen #banana I skipped another sweetener 🥣🍶
If you have a sweet plate then add a spoon of coconut sugar or date paste or honey or maple syrup while cooking...as cacao and coffee combo in a bit strong if you're used to it....for me milk mellows all favours...
