A special day is coming soon ❤️ Sharing a recipe for healthy chocolate covered strawberries that everyone can enjoy. These berries are dipped in @lilys_sweets dark chocolate, which is an amazing alternative to your standard chocolate chips. I sprinkled a few of them in flaxseeds and chia seeds turning this ultra indulgent treat into an antioxidant rich superfood snack. (Berries, sugar free dark chocolate, flax and chia?! Yes please)

And I figured - why not take the opportunity to introduce kumquats? They are so tangy, sour and delicious all at the same time. Dipped in chocolate- they’re perfection. I personally really love citrus + chocolate, how about you? I’m not sure how the kids will feel about them, but dipped in chocolate is never a bad way to experience something for the first time.

And I just want to be real here. There is no harm not making every snack and treat nutritious. Not everything needs to be enhanced. Every baked good doesn’t need to have a secret veggie. And I believe this so much more around holidays. But, when you become a parent you learn that special days (valentines day, easter, halloween, to name a few) become week long sugar rushes. And in this recipe, the sweet and rich taste of a chocolate covered berry is not compromised one bit by making them a little healthier this way.

Recipe:
🍓2 cups strawberries- washed and dried. They need to be completely dry so the chocolate sticks.
🍓1/2 cup @lilys_sweets dark chocolate chips
🍓1/4 cup @terrasoul cocoa butter
🍓ground flaxseeds and chia seeds

Melt chocolate chips and cocoa butter
Dip strawberries in melted chocolate
Place on a baking sheet over parchment paper or silicone baking sheet
Sprinkle on flaxseeds and chia seeds, if desired

Shortbread crust:⁠
1 cup rolled oats⁠
1 cup raw cashews⁠
⅛ cup maple syrup⁠
3 Tbsp coconut oil or nut butter⁠
Caramel:⁠
1 cup full-fat coconut milk⁠
⅓ cup maple syrup⁠
4 Tbsp coconut sugar⁠
½ cup cashew butter⁠
Chocolate:⁠
200g vivani_chocolate 70%⁠
1 Tbsp coconut oil⁠
—•—Method—•—⁠
1.Line a 20cm x 20xm brownie tin with parchment paper and set aside.⁠
2.Prepare the crust by adding the oats and nuts into a food processor/blender. Pulse for 10 seconds.⁠
3.Add in the maple syrup and coconut oil and pulse a few times until you have a sticky dough. Place the dough into the brownie tin and use your hands to press down evenly (you can use a spatula to even out the surface). Place into the freezer.⁠
4.For the caramel, heat up a sauce pan over medium heat. Add all ingredients and stir until smooth for 2 minutes. Poor the caramel over the crust layer and even out. Place into the freezer to set for 1 hour.⁠
5.Once the caramel layer is firm, melt your dark chocolate and poor it over the caramel. Even out the layer carefully and place back into the freezer for 5 hours. Make sure it's completely firm before cutting it, otherwise the layers won't come out as clean. Store in the freezer for up to 1 month. ⁠

Ingredients 🍲:
for 4 servings
BALSAMIC SOY SALMON
½ cup soy sauce (120 mL)
½ cup balsamic vinegar (120 mL)
¼ cup olive oil (60 mL)
2 cloves garlic, minced
12 oz salmon (345 g), 2 fillets
GARLIC PAPRIKA
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
½ tsp pepper
12 oz salmon (345 g), 2 fillets
VEGETABLES
1 large carrot, thinly sliced on bias
5 oz green beans (140 g), ends trimmed
5 oz asparagus (140 g), ends trimmed, chopped
1 medium yellow squash, chopped
olive oil, to taste
salt, to taste
pepper, to taste

DIRECTIONS 👩‍🍳:
In a square baking dish, combine the soy sauce, balsamic vinegar, oil, and garlic, and whisk to combine.
Put 2 of the salmon fillets in the soy and balsamic mixture, making sure all sides are coated.
Transfer to the refrigerator, marinading for 30 minutes to 2 hours.
Preheat oven to 450˚F (230˚C).
In a small bowl, mix together the paprika, garlic powder, onion powder, salt, and pepper.
Evenly coat the remaining 2 salmon filets with the spice rub.
