✨Chilli turkey with broccolini & corn ✨
As requested, I made this amazing recipe last night for dinner . This is one of many I have been enjoying as part of the #thehse 6 week mini program. Healthy & delicious .... super easy and husband approved too!! 😋
Double recipe for 2 people 🙏
〰️ 190g raw turkey mince
〰️ 1 brown onion, diced
〰️ 2 cloves garlic, crushed
〰️ 60g canned cannellini beans, drained
〰️ 220g Italian crushed tomatoes
〰️ 200g broccoli florets or broccolini
〰️ 100g canned corn kernels
〰️ 0.5 tsp olive oil
〰️ 1 tsp cumin
〰️ 2 tsp fresh coriander, chopped
〰️ 1 Birdseye chilli, chopped
〰️ 30g pumpkin seeds
〰️ Pinch salt & black pepper
1. Heat olive oil in a pan over medium heat, sauté onion and garlic for a few minutes. Add the turkey mince, breaking it up whilst cooking.
2. Add the cumin, coriander, chilli & cook for a further 2 minutes then add the crushed tomatoes, cannellini beans and corn, stirring well to combine. Cook on a low heat for 15-20 minutes.
3. Meanwhile, cook the broccolini in a steaming basket over boiling water for about 10 minutes or until softened.
4. Serve the chilli turkey mix alongside the broccolini and sprinkle with pumpkin seeds.
Optional ... I served topped with chopped avocado, corn chips , grated pumpkin & coconut yoghurt 👌
