Set your day up with an easy breakfast or anytime of day meal in under 15 minutes only with 5 ingredients = less is more!⠀

Cooking eggs is life skill. I use to be terrible once upon a time. Now I cook them multiple ways and never get bored of them. I don’t eat eggs every day either I like to use duck eggs too which are superior in nutrients such as omega 3 + D3 and many more.⠀

Eggs are cheap, I get mine from my local farmers market which are organic + free range (pasture raised), they are classified as misshaped which even further reduce the price to £1.30 per 1/2 dozen (6).⠀
—⠀
Breakdown if one cares:⠀
587 Cals - P31 C46 F32⠀
This filled me up several hours without the need for snacks in between proper digestion with no impairment in function.⠀
—⠀
• 3 eggs⠀
• 1/2 avocado⠀
• 1/2 tbsp EV Olive Oil⠀
• handful of kale / dark leafy greens⠀
• 2 thin slices of sourdough bread⠀
—⠀
1. Preheat grill to medium. Add the bread to toast per side until preference.⠀
2. Heat pan to medium.⠀
3. Add 1/2 oil. Sautés the greens until wilted, remove.⠀
4. Add the remaining oil to pan.⠀
5. Whisk the eggs then add to the pan, allowing to just set on outside before folding in the edges and shaking or tilting the uncooked eggs to outside.⠀
6. Once 75% cooked though, turn off as heat will continue cooking through.⠀
7. Slice or mash your avocado.⠀
8. Scatter over some chilli flakes, dried nori and parsley to make it sexy. Squeeze over lemon to increase the iron + vitamin C absorption and Bon appetite.⠀

I self loved the s*%@ out of myself today 💝 What does a day of self love look like for you? ▫️
▫️
Today, I went on a long scenic walk around Lady Bird lake, went to the gym, had lunch at 𝓟𝓲𝓬𝓷𝓲𝓴, and washed my hair (ladies, you know the struggle). ▫️
▫️
For my first time at 𝓟𝓲𝓬𝓷𝓲𝓴, it exceeded every expectation. My date was me, myself, oh and I. First off, the staff is so friendly! Everyone was saying hi and we were joking around while I waited for my food. Secondly, HOT DAMN were these  𝑭𝒊𝒔𝒉 𝑻𝒂𝒄𝒐𝒔 amazing! I know in Austin you can get tacos anywhere, but these were so fresh. Only the best ingredients go into their dishes. The fish had such a flavorful coating and don’t get me started about the chipotle aioli 🤤 That and my butter coffee (super yummy and Keto if you’re into that sort of thing) was a hug and slap on the ass for myself, from myself 💕 ▫️

we all deserve someone who looks at them the way I look at these nourish bowls 😇🥰 always filled with so many colorful goodies 🤩 i never get tired of making these 🙌🏽 such a nutritious & satisfying meal, perfect for lunch or dinner! Makes it even quicker if you prep some ingredients before hand, I like to air fry my sweet potato, veggies, & veggie burger while I put together the rest of the bowl 🥗 also i like to use any leftover veggies I have in the fridge like these string beans from the night before! Ive been loving hummus, lemon juice, olive oil & garlic powder for my dressing!💯 & that massive veggie burger is the california veggie burger from @drpraegers that I got at costco!! one of my favorites 😍😍 Happy Friday everyone! 🤗💕

Today’s working lunch! A smoked salmon bowl with zucchini noodles, greens, capers, tomatoes and tzatziki! So refreshing! And followed by an almond milk latte to warm back up! Thank you @lepainquotidienusa for always making my working lunches so enjoyable! I particularly enjoyed being served this lunch while I wrote a blog post about mindful cooking! Ha ha! A bit of a contradiction but all good, sometimes I like to mindfully NOT cook😉. Stay tuned for our blog about mindful cooking and our upcoming cooking class experience at the P.O.P Retreat with Chef Kieron Hales @cornmanfarms. 
And then .... home to the smell of a chicken Thai curry brewing in the crockpot! Happy sigh! Happy weekend everyone! .

How to MEAL PREP on a BUDGET! 😍💪🏼

I’ve had a lot of people asking me for tips on how to meal prep and crush their nutrition on a budget, so wanted to share my top tips with all of you! Make sure to save this post for later 💜👇🏼

1️⃣ MAKE A PLAN & A LIST - a great tip when it comes to meal planning is to check out your local grocery stores weekly flyer and create your meal plan around what’s on sale that week! For Example: if you usually use broccoli for meals but Brussels sprouts are on sale, can make an easy substitute and save yourself a couple bucks! So always plan out your meals for the week and create a list of things you need before heading to the store, that way can stick to your list & budget when you go to the store! 👌🏼

2️⃣ SHOP IN BULK - shopping the bulk food aisle at your local grocery store for things like beans, grains, quinoa, nuts, seeds etc and hitting up wholesale stores like Costco, will save you a ton of money in the long run! 🙌🏼 So take advantage of BULK savings and learn how to store foods to keep them fresh longer! 💰

3️⃣ STORING FOODS IN BULK - make sure to always store things like grains, nuts, pastas etc in air tight containers in a cool dark place! Also make sure to label them with the date you buy them so you know how long you’ve had them! Store herbs in the fridge with fresh water - cut the stems, cover with plastic wrap and place in a glass of fresh water in the fridge! Store nut butters upside in the fridge! Place paper towel over leafy greens to soak up moisture and keep them from going bad fast! Soak your berries in a vinegar rinse to kill bacteria and keep your banana stems wrapped with plastic wrap to keep them from going bad and putting off a gas that will spoil other fruits and veggies faster as well!

4️⃣ COOK IN BULK - meal prepping in bulk not only saves you a ton of time and helps you stay on track, but will save you a ton of money as well!
