honestly i stopped eating pasta regularly like in my early 20s? along with french fries. but pasta made a COMEBACK. in bean form. 😂 i seriously cannot tell the diff.

to make this just cook 1 serving bean-pasta per package instructions (edamame noodles take like 5 min). sautee the veggies. add pasta, 2 tbsp pesto (or any other sauce). EAT. i used @explorecuisine edamame pasta (not sponsored, costco sells it, it’s so good - the only ingredient: EDAMAME) 💥

Can you believe there’s actually a pasta that has MORE PROTEIN than carbs in it 🙀🤩If you didn’t know about this then let me introduce to you EDAMAME SPAGHETTI 👏🙌 It has 24g of protein & 21g carbs per 2 oz serving making it SO macro friendly compared to wheat pasta which is typically 42g carbs & 6g protein. This makes it a GREAT high protein vegetarian option & since it’s lower carb then it can easily be paired w/ another carb source like toast & it still doesn’t make it a more carb dense meal👏👌

Directions:
•Bring 2 cups salted water to a boil, add pasta, turn off heat, & cover for 3 minutes
•Heat sauce in a sauce pan & stir in garlic salt & basil
•Spray 0 calorie cooking spray on sour dough, add 1/2 cheese & basil, & toast in toaster oven for 4 minutes
•Drain pasta after 3 minutes, add back to pan, pour in sauce, mix pasta with sauce, plate, top w/ the rest of the cheese & basil w/ garlic salt, & enjoy😋🙌

Easy lunch idea >> healthy chicken pasta bowl with lots of veggies & avocado.

Ingredients: bit of olive oil spray, garlic, spring onion, mushrooms, paprika, kale, zucchini >> everything stir fried in a pan.

 I added my protein portion, in this case chicken breast (I made few days ago in the oven) and a bit of spicy sauce.
As carb option today: pasta
Trick : as there are lots of veggies, there is no need to add more portions of pasta, I stick to one during my lunch and it’s totally satisfying. 
On top: avocado, salt & pepper .

1) Buckwheat with roasted Carrots and walnut sauce. The recipe calls for wild rice, but I didn't had any at home. Buckwheat is a really interesting and delicious substitute for it😊 
2) Pink Pesto Pasta. Really simple! You don't need much ingredients for it.
3) Split pea soup with ginger and lemon. My favorite soup from this book so far😍 
4) Quinoa and black bean salad with radish-salsa. Perfect for a lunch box😄
5) Broccoli with garlic-ghee and pine nuts and crispy sour cream and onion chickpeas on puy lentils😍♥️ Yum
6) Cashew-Corn-Chowder. My mixer isn't the best so I have to cook the soup a bit longer the next time to make the corn softer🤔  I also used cashewbutter instead of whole cashews.
7) Beetroot with white beans, lemon and mint. I used leftover cooked beets from the pink pasta recipe for it🤤
8) Chickpea and mushroom ragu with sage on Rice. My mum loved it as much as I did🤤
9) Bowl with leftover steamed brokkoli, quinoa, sour cream and onion chickpeas and walnutsauce😊 I love to pair my leftovers!

Can you believe there’s actually a pasta that has MORE PROTEIN than carbs in it 🙀🤩If you didn’t know about this then let me introduce to you EDAMAME SPAGHETTI 👏🙌 It has 24g of protein & 21g carbs per 2 oz serving making it SO macro friendly compared to wheat pasta which is typically 42g carbs & 6g protein. This makes it a GREAT high protein vegetarian option & since it’s lower carb then it can easily be paired w/ another carb source like toast & it still doesn’t make it a more carb dense meal👏👌

Directions:
•Bring 2 cups salted water to a boil, add pasta, turn off heat, & cover for 3 minutes
•Heat sauce in a sauce pan & stir in garlic salt & basil
•Spray 0 calorie cooking spray on sour dough, add 1/2 cheese & basil, & toast in toaster oven for 4 minutes
•Drain pasta after 3 minutes, add back to pan, pour in sauce, mix pasta with sauce, plate, top w/ the rest of the cheese & basil w/ garlic salt, & enjoy😋🙌

Balsamic Chicken & Veggie Pasta🍝
This dinner tonight brought to you by.. The veggies were about to go bad so I threw everything in my fridge together!🤪😅 #usewhatyouhave *Sorry in advance.. I never measure things when I cook so the ingredients are rough estimates!*
••Ingredients:
Pasta noodles of choice
2 chicken breast 
2-3 large mushrooms
1 big zucchini
1/2 cup diced white onion
Handful cherry Tomatoes 
2 handful’s broccoli florets 
Olive oil
1Tbsp Minced garlic 
Red pepper flakes
Pink Himalayan salt
Pepper
Balsamic vinegar •
••Instructions:
Cut up thawed chicken and cook with balsamic vinegar. Start cooking noodles in a separate pot. In new frying pan, add olive oil, garlic and onions- cook until onions golden. Add all veggies and let steam with the lid on. Add salt, pepper and red pepper flakes. When chicken and veggies are cooked through and pasta is strained & ready, add all ingredients in with the pasta and drizzle balsamic as desired. Woohoo! Enjoy!!
