spinach waffle πŸŒ±πŸ§‡ i wanted a small noncommittal snack so i whipped out a blender and waffle machine just to make this waffle. yes, just this one tiny waffle. oh, the things i do for my tummy. this is made out of spinach, oats, greek yogurt, and egg with the tiniest dash of sugar (totally did not douse with syrup after πŸ™‚). so basically it’s #gains #healthy #greenmachine πŸ’ͺπŸ˜ŽπŸ€™πŸ˜€πŸ€œπŸ€› (p.s. still tasted like spinach. can’t be used to trick kids.)

Tasty gluten free vegan Mac n Cheese made with my vegan/paleo cheese sauce recipe. Give my recipe a try, add your own twist, let me know what you think!

Kiley’s Vegan Cheese Sauce 🧑

3tbsp coconut oil, 1 cup white sweet potato chunks, 1/2 cup diced carrots, 3/4 cup coconut milk, 3/4 cup water, 1.5 tsp lemon juice, 1 tsp salt
.
SautΓ© veggies in coconut oil, add water, coconut milk and salt and boil until veggies soften. Add lemon juice and blend it all together and then let it all cook down and thicken on stove top. 
Add more lemon juice, salt, or other spices if desired. Paprika and pepper are my recommended additions. Sweet potato can be swapped with winter squash and coconut oil could be swapped with a different type of oil.

One pot chicken hidden vegy noodles for the kiddies #foodforkids #hiddenveggies #noodles #littlechefs  Recipe:
1/2 carrot grated, 2 spring onions chopped, 1tsp low sodium soya sauce, 1/4 tsp Chinese spice, 1/4 tsp turmeric,2 large mushrooms sliced, 1/2 veg stock cube, 1/2 chicken breast, 250ml water, any dry noodle of your choice. Put all ingredients except the noodles in a pot and boil and then simmer for 10 min. Take the chicken out, shred and set aside, blitz the vegy broth and then bring back on the heat, add the noodles (cook according to instructions), then stir in the chicken and serve topped with sweet corn

T-Rex toast! A fun spin on a classic brunch using your favorite French toast recipe and adding a greens powder supplement (or food coloring, if that's your preference!). RECIPE...
Courgette cake.. lively and light.. serve with lemon curd or lime drizzle.. TIP..Makes up well using Gluten Free Flour as the courgette gives additional moisture.. Ingredients:
3 Medium Eggs
125ml Rapeseed Oil or light flavoured Vegetable oil 
125gr Caster Sugar
225gr Self Raising Flour
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
250gr Courgette 
Preheat oven 180 Β° / 160 Fan / Gas 4 
Beat Eggs , oil and sugar until creamy.

Sieve in Flour, soda and baking powder. 
Finely grate courgette and squeeze out excess water ( I use my fingers and just squeeze)

Stir in Courgette.

Into the tin and bake for 30/35 mins ... if in sandwich tins takes 25/30 mins , if loaf tin then 40/45... you know your oven so keep an eye πŸ˜‰
