Dal-chawal is not just a dish, but an emotion for most of us. It’s a reminder of all things home and comfort - a trip down nostalgia lane with every bite. No? It was the first thing I learnt to make when my mother began to allow me to cook by myself in the kitchen. She said that if you can make dal-chawal then you won’t ever go hungry. Wise words, I say, because when I started living alone during my college days, this was my comfort food and like a warm hug that I’d come back to. While dal at home would be more simple in terms of it’s tadka, I would add “extra” of everything to make it fiery and full of added flavours.
So here’s the #recipe for my dal tadka:
Arhar dal - 1 cup
Chopped onion - 1
Chopped tomato - 1
Chopped garlic - 5
Curry leaves - 4
Ghee - 3tbsp
Jeera - 1tsp
Red chilli powder - 1tsp
Turmeric powder - 1/2tsp
Coriander powder - 1tsp
MDH Sambhaar powder - 1 tsp
Salt - to taste
Boil arhar dal with salt and turmeric powder. I take the ratio of dal:water as 1:3. Once the dal boils, keep it aside.
Now in a wok, add ghee and let it heat.
Once heated, add jeera + curry leaves
When they begin to splutter, add garlic, followed by onions.
Once they’ve browned, add the chopped tomatoes as well, followed by all the dry masalas
Cook this till tomatoes soften and everything comes together
Add this tadka to the dal and serve it hot with rice
