~Creamy Chicken Pesto Pasta~
When that pasta craving hits, satisfy it with this! So YUM!!!😋😋😋 I really should have served myself a glass of wine with this dish...what is wrong with me?! 🤣😂 Oh well, next time!
1 lb pasta, cooked - reserving 1 c of the pasta water in a cup
2 Tbsp extra virgin olive oil
2 large chicken breasts, chopped into bite sized pieces, seasoned well with salt and pepper
2-3 Tbsp bacon pieces
1/3 c pesto
1/2 c half and half
1/3 c freshly grated Parmesan
1.) Cook your pasta to al dente and before draining reserve 1 cup of the pasta water and set aside.
2.) Heat the oil in a large skillet. Add in your chicken pieces and cook for about 5 min, or until chicken is cooked through. Then, add in bacon pieces and cook for another minute or so.
3.) Next, add in the pesto sauce and mix well until incorporated. Then, pour in the half and half and bring up to a simmer. Once simmering add in the freshly grated Parmesan and continue simmering for 3-5 minutes or until sauce begins to thicken.
4.) Once desired consistency is reached, add in your cooked pasta and toss well. As the pasta absorbs the sauce, slowly add in your pasta water 1/4 at a time, as needed. - 26 minutes ago
